aaaaaah, thank goodness it’s FRIDAY! (Imagine me jumping in the air and smiling from ear to ear)  This week has certainly been all jumbled and all over the place, but I made it!  I’d like to think that Friday is the start of a relaxing and do-nothing kind of weekend, but oh it’s not and I don’t think I’ve slept in past 5:30am for the past 2 weeks!  But you gotta do what you gotta do.  Both Chris and I have our parents in town as well, so we want to spend as much time as we can.  This weekend is already pretty packed, read on for some more info on my trip to Camp Blogaway on Saturday!   (more…)

Pedal to the Medal

Anyone else out there think Monday came waaaay too fast?  Especially after that holiday weekend!  Not too much ensued for me this weekend, but I did get to visit with my grandparents in town on Friday evening and spent a good portion of Saturday finishing up wash and house chores.  I am definitely enjoying the slight cool down we are having here because that means that race/ride/endurance event season is approaching!!!  Granted it is still 100 F here today and I’m wondering if fall is ever going to come?   (more…)

quick chicken tagine

I have never made any kind of tagine before but have always wanted to.  Those weird, cone-shaped, clay-like dishes always piqued my interest, and I was curious as to what on earth was made in there.  While I unfortunately don’t have a tagine cooking vessel of my own, I do have a large braising pan that worked well enough.  I’m sure the long, slow-cooked flavors of a traditionally cooked tagine is out of this world, but this recipe is actually one of my new favorites!  With the cooler weather coming around the corner, this is definitely the kind of recipe you’ll want to gather family and friends, cuddle up, and sit together at cozy kitchen tables with good food and conversation.   (more…)

lunch at the park + another wedding venue

Happy Labor Day weekend!  I always love 3-day weekends!  It always seems like I can get so many more things done.  We had a spontaneous lunch at the park with Buster the Basset the other day.  He is so funny!  I also went to my first bridal show, which was an interesting experience, and visited another wedding venue option.  Today I was even able to get in a longer bike ride. Sweeet!  I hope you have enjoyed your weekend and an extra day if you were able to have Labor Day off.   (more…)

wedding venue choice #1

whew, this week is proving to be a whirlwind already!  In order to take a break from it all I thought I’d come back to my happy place and blog about a recent visit to a possible wedding spot.  Even though our wedding date isn’t set exactly, we have an idea to look out for September 2012.  I know you’re thinking, well why the heck are you already looking when it’s 2 long years away?!  True True.  I confess, once I get my mind going on something there’s no turning back!  We visited a local golf course/country club called Anthem and it was gorgeous!   (more…)

Grilled Oroweat ‘Pizza’ Thins

These are the coolest pieces of bread to hit the market and they are very versatile to use for all sorts of quick recipes.  While the ingredients list is a little longer than I’d like, they are only 100 kcals, have 5 g of filling fiber, and taste great.  As a Foodbuzz tastemaker I was sent a few packs to review and share my favorite grilling recipe with them!  Soooo here goes  (more…)

staycation at The M Resort

Many times taking a full vacation out of town is not always feasible or affordable, so to celebrate our 4th anniversary Chris and I decided to have a mini staycation at the M Resort!  It’s fairly close to us, easy to get to, and is a beautiful hotel.  It’s also not too far from the Strip either, but we kind of like being off the hustle and bustle of the strip ‘looking in’ from afar.  It turned out to be a quick trip, and I wanted to stay longer of course, but it was fun and gave us a little break time together.   (more…)

happy campers in mt. charleston

Hello!  Chris and I made a bee line for Mt. Charleston last Friday to get in some good ol’ camping and biking.  We kind of got everything together last minute, and it was a pretty short trip, but we had fun!  It was nice to get out of the Vegas heat and not have cell phone service for a little while.  Sometimes it’s just nice to sit out in nature with a book in hand, a cool breeze at your back, and nothing but whispering trees and chippers climbing up your leg wanting more pistachios.   (more…)

asian-style pb sauce

Happy Wednesday!  This Asian-style peanut butter sauce is very versatile and can be used in all sorts of things.  I mostly like it with roasted veggies, noodles and tofu, but it would be a great marinade for chicken or for a satay dipping sauce  for a party with chicken skewers.  I really just like it I think because it is heavy on my favorite peanut butter flavor.  I will also warn you that this is not the lightest sauce in the world, but it is full of healthy fats and sure tastes good!   (more…)
