Boy it feels like I haven’t posted in a really long time, and because I passed my thesis proposal this afternoon (!!!), I decided to reward myself with a little blogging R&R. Yay! I am soooo happy and relieved that this step in the thesis process has been accomplished and I’m excited to start the assessments and intervention. It has been stressful let me tell ya, but I’ve been trying to stay sane and on my bike, even if it’s only been an hour a week sometimes! Yikes. active weekend

Hello eatingRD readers!  The weather is warming up nicely again and we were able to get in some fun activities for the weekend!  Chris made it through his first sprint triathlon on Saturday at RAGE and I had a nice team bike ride through gorgeous Valley of Fire State Park. I tried a new recipe recently instead of trying to save every last ounce of time with tried and true favorites.  Yay!  I have to say that I unfortunately haven’t been in the kitchen as much as I used to and it stinks.  Chris and I have made a pact that once school is over and done with (hopefully soon before my head starts turning in circles), we are going to get back in the kitchen together more often.  It’s just been really tough lately.  Here is a tasty and pretty easy recipe that we both loved!   (more…)

cleaning the bike + a crit race

With the weather warming up in some parts of the US, it’s time to get the cobwebs off the bike, make it look all shiny and get those legs going again!  We’re actually pretty fortunate to have decent cycling weather year round here in Vegas, but usually if it gets near freezing I chicken out!  I’m actually already complaining about the heat and roasting here and it’s only in the upper 80s.  Hopefully I will acclimate fairly soon because it’s going to get hot folks.  Even if you don’t have a road bike, or don’t care about cleaning one, it’s still exciting that spring is in the air 🙂  Here’s a little tutorial on how I clean my bike and a crit race recap . . .   (more…)

missing in action and my first DNS

Hey there!  Boy the end of the semester is fast approaching and since I found a thesis topic of study late, I’m scrambling to find time for it all!  Yikes!  Unfortunately I’ve had to back off quite a bit on blogging 🙁 but I’m hoping I can make it to graduation in May, or at least this summer at the latest and get some of my life back.  Juggling 2 jobs, class papers, thesis, wedding planning, cycling training and races, gym time and me time has been challenging and I’m thinking I need a mental and physical break soon.  I do have my second stage race to report, although the final results aren’t too great and I’m pretty disappointed in myself.  The weather didn’t want to cooperate that’s for sure, which made for an interesting weekend . . .   (more…)

back on the bike

Holy moly, I actually rode my bike for the first time in 3 weeks this past weekend!!! yippeeeee!  Well, I was sucking air like I had never gotten on a bike before and blowing snot rockets like you wouldn’t believe (watch out), but I actually made it without keeling over.  Yes. Now begins the long journey to get my stamina back.  It’s amazing how quick it goes.  I’m trying not to think about it too much and push ahead to get stronger!   (more…)

Alright, alright, I confess!  So I had a slip-up with the Eat In Month Challenge last weekend and it wasn’t a mistake 😉  With Chris being away for work, I needed some socializing and I couldn’t help NOT going out with girlfriends!!  I hadn’t hung out like that in awhile and it was fun!  A nice dinner and then a round of cosmic bowling left us so tired there was no room left for dancing, just yawning.  I think I’m getting old when 9:30 rolls around and I’m pooped!  But I do sport those bowling shoes well . . . hehe   (more…)

stay healthy this holiday season

We all know that the holidays are fast approaching!  Every store we go into is blasting festive, cheery music, lights are twinkling, and for some, everything is blanketed in that white stuff that’s wonderful to look at but not so fun to drive in. While we’re scrambling to get every last task accomplished, all the gifts wrapped, the house cleaned, cookies baked for the cookie exchange, and still find the energy to make it to the gym or train, the last thing on our minds is our own sanity and health!   (more…)
