Many thanks to all your wonderfully kind words and thoughts about Buster.  We really appreciate it.  We were pretty much a mess this past week, but with time it is getting easier.  I don’t think there can be anything that can replace our happy guy, but we have to just remember all the good times we had for sure.  I have gotten a little back logged on recipes, but I do have one of my favorite cabbage recipes for you!

creamy mushroom and spinach lasagna

Hello Friends!  How is your week going so far?  I’m definitely not 100% quite yet, but boy I’m feeling better!  I actually slept through the night without waking up once and made it to spin this morning after 2.5 weeks of blah.  I kept it super moderate, and while my chest was a little tight, I felt ok.  Hallelujah!!!!

It’s casserole time!  These are great because they make a butt-load of food and are comforting, yet can also be packed with nutrition.  We aren’t having the nasty snow storms and crazy weather like the east coast is having (yikes!) but it has been actually pretty chilly here for us weather wimps out in the west! 🙂  This is perfect for the chilly weather. Happy Pho makes my tummy happy

Since being sick my appetite has been waaaay off, and I know when I’m not interested in eating there is something way wrong!  I always seem to be interested in food!  Hence the name, right?  Hopefully this virus that has taken over my body will part ways soon and I can get my normal energy back.  In the mean time, I’ve been trying to find food that sounds appetizing and I haven’t had much luck.  I stand in front of the fridge pondering and waiting, just waiting to see if a good craving will pop up.  Nothing but a small, ‘meh’ emerges, along with a painful cough.  I just eat because I know that’s what I should do.  But, alas!  I actually found a great product that soothed my sore throat and chest and was pretty much the only thing that has made my tummy happy.   (more…)

Hey there eat in month-ers!  How has the challenge been going?  And if you’re not participating in the challenge this year, how are your goals and planning for the new year coming along?

I truly believe that large goals may seem unattainable at first, but with small, measurable, and realistic steps, it can be done!  Dream big, but start small.  In other news and dreaming big . . . I actually reserved our wedding spot!!! eeeek!  I can’t believe after 4.5 years, it’s actually for real now.  Talk about planning, but I love to plan!   (more…)

quick chicken tagine

I have never made any kind of tagine before but have always wanted to.  Those weird, cone-shaped, clay-like dishes always piqued my interest, and I was curious as to what on earth was made in there.  While I unfortunately don’t have a tagine cooking vessel of my own, I do have a large braising pan that worked well enough.  I’m sure the long, slow-cooked flavors of a traditionally cooked tagine is out of this world, but this recipe is actually one of my new favorites!  With the cooler weather coming around the corner, this is definitely the kind of recipe you’ll want to gather family and friends, cuddle up, and sit together at cozy kitchen tables with good food and conversation.   (more…)

crockpot meatloaf + a winner!!!

I’m a big fan of meatloaf because it’s fairly easy to make and leaves you with a butt-load of leftovers which are great for sammies, crumbled and mixed into pasta, or just as is.  This time around I decided to experiment with my original stuffed meatloaf recipe, but in the crockpot.  I think this is now my preferred method!!  I used extra lean beef which is key, so there isn’t too much extra fat in the pot.  It comes out super moist and perfectly formed because the temperature is low enough that the gooey cheese in the middle doesn’t have time to escape like it sometimes tries to do!

cheesy goodness

I don’t eat a lot of butter and full-fat cheese all too often, but when I do, it sure is glorious! There’s nothing like the rich and succulent ooey gooey goodness that comes with cheesy baked casseroles. Even just a nice little piece is more than satisfying. One of the top recipes I wanted to try in Giada’s new cookbook since getting to meet her, was cheesy baked farro.  Of course, who wouldn’t love anything enveloped in cheesy goodness?  I also wanted to try my hand at farro for the first time.   (more…)

Oh boy, where did we leave off last? . . . oh yeah that’s right birthday cake, pasta, cupcakes, nutella waffles and  . . . oh my, and this post is continuing the streak of decadent eats.  I’m not going to say they are much ‘healthier’ since I used 1% fat milk and reduced fat such and such, but I will say these recipes are pretty darn good!   (more…)

I am having the darndest time getting up in the morning lately!  ugh, 5am is just too darn early and when the alarm goes off I moan and groan wishing I could just stop time for a few more hours.  I’ve always had this fascination with wanting to be able to stop time.  Wouldn’t that be awesome?  ha, in the mean time I’ll keep wishing for that day and get my butt out of bed!  I think it does have a lot to do with not getting to bed till close to 11pm, which I need to fix.
