I tried a new recipe recently instead of trying to save every last ounce of time with tried and true favorites.  Yay!  I have to say that I unfortunately haven’t been in the kitchen as much as I used to and it stinks.  Chris and I have made a pact that once school is over and done with (hopefully soon before my head starts turning in circles), we are going to get back in the kitchen together more often.  It’s just been really tough lately.  Here is a tasty and pretty easy recipe that we both loved!   (more…)

Hey all! Hope you had a fun and safe New Year’s!!! 2011. Wow. What were you up to this new year’s? Parties? Quiet night at home watching the ball drop? . . . quick chicken tagine

I have never made any kind of tagine before but have always wanted to.  Those weird, cone-shaped, clay-like dishes always piqued my interest, and I was curious as to what on earth was made in there.  While I unfortunately don’t have a tagine cooking vessel of my own, I do have a large braising pan that worked well enough.  I’m sure the long, slow-cooked flavors of a traditionally cooked tagine is out of this world, but this recipe is actually one of my new favorites!  With the cooler weather coming around the corner, this is definitely the kind of recipe you’ll want to gather family and friends, cuddle up, and sit together at cozy kitchen tables with good food and conversation.   (more…)

happy campers in mt. charleston

Hello!  Chris and I made a bee line for Mt. Charleston last Friday to get in some good ol’ camping and biking.  We kind of got everything together last minute, and it was a pretty short trip, but we had fun!  It was nice to get out of the Vegas heat and not have cell phone service for a little while.  Sometimes it’s just nice to sit out in nature with a book in hand, a cool breeze at your back, and nothing but whispering trees and chippers climbing up your leg wanting more pistachios.   (more…)

funky quinoa & walnut chicken

I saw a box of red quinoa at TJ’s the other day and had to give it a try!  Isn’t TJ’s just the bomb?  I’m so glad we have one fairly close to us. I always seem to find something new to try.  Well, that’s how I am at most grocery stores, go in for one or two things and come out like a kid in a candy store.  Chris says I am no longer allowed in Whole Foods, ha! I also made my usual walnut crusted chicken with the quinoa dish, but added another ingredient for some extra crunch and texture.  You’ll see!   (more…)

summer grilling favorite

Hello Friends!  Yes, it is finally mid-week!  This one has been going a bit sloooow for me.  Anyone else?

Well I finally managed to get my butt up at 4am for an early morning ride, yes!  I have been on several rides here and there, but nothing very consistent and boy oh boy I can tell.  Definitely wasn’t my best showing this morning, but it feels good to get out there at least.  With this hot weather, I’ve been a little bleh lately.  Even at 4:30 in the morning it’s very warm.  No fun.  I cannot wait until I can ride to and from work again.  I miss that bunches.   (more…)

I receive the Nutrition and Your Child Newsletter which is a research-based newsletter produced by the USDA/ARS Children’s Nutrition Research Center (CNRC) at Baylor College of Medicine.  I was really intrigued by this recent snippet which linked the creation of a positive athletic self-image in children to being active throughout life.  I attached part of the newsletter below and hope you enjoy it too.  It’s amazing how truly influential we can be in children’s lives and their future health.   (more…)

a taste of summer

I had a packet of farro in the pantry that I bought a little while ago because I loved it in the cheesy baked farro I made so much, I wanted to find something else to use it with.  I also bought a bunch of veggies at TJ’s the other day and needed to use those as well.  The weather is warming right up around here along with most of the country, so I thought I’d whipped up some kind of summery salad.

I had some lemons in the fridge that were on their last leg, so I decided to make a lemony farro salad with roasted heirloom tomatoes, asparagus, haricot verts and fresh mozzarella.  It turned out really well and refreshing!  Because I still have a few big bags of pistachios left when I won a year supply from The Green Nut on Twitter, I decided to also make coconut-pistachio crusted chicken tenders again to go alongside.   (more…)

easy din dins

This week I’ve been resorting to fairly easy fix ‘er uppers for dinner, mostly because it seems like time is of the essence lately.  Is there really ever enough time?  Sometimes I have this crazy hope that someday we will be able to freeze time in its tracks, just for a few hours or so to get caught back up.  I could see this being a major problem, but it’s always nice to dream!

The wind has greeted us yet again here in the desert, and when it does it really does!  I think last night we had gusts up to 63 mph and I thought our townhouse was going to break away from the foundation and take us away like the Wizard of Oz. Well, we’re still here safe and sound, but it hasn’t left much by way of bike riding, especially in the afternoons when it really kicks up.   (more…)

This dish sure hit the spot Friday night, and it may look challenging, but it’s really not too bad.  I also had some local purple carrots and baby parsnips that needed to be cooked, as well as some cauliflower and fingerling potatoes.  I love dishes like this 🙂  There are also some more cute doggie pictures ahead!    (more…)
