simple sunday supper

After the culmination of the weekend was coming to a close, Chris and I decided to do something not so conventional for us on a Sunday evening . . . we cracked open a bottle of wine and rented a movie!!  Usually we spend Sunday night getting things situated for the week and try to get to bed somewhat early so we’re not walking zombies on Monday.  Because our weekend was pretty packed with bike rides, swim lessons, visiting with in-laws and friends, homework, and business brainstorming, I felt like taking it easy.   (more…)

california pizza kitchen love

Friday night after getting home from work, all I really wanted to do was go out to eat and relax!  It has just been one of those weeks if you know what I mean.  I had a few snacks because I was starving waiting for Chris to get home and I had even contemplated going out to eat by myself!  I’ve actually never gone to a sit-down restaurant alone before.  Yes, I’ve been to places like Pei Wei and Panera Bread, but just not full-service, isn’t that funny?  Have you?

Chris finally made it home and we headed out, indecisive as usual.  Most of the time we hop in the car and then try to make a last moment decision before turning off at the exit.  This time, we passed a few of the exits we were thinking of and finally made our way a little further to California Pizza Kitchen.  I’m so glad we went!  It was fun to walk around Town Square and the meal was really tasty and not too expensive for two.   (more…)

it’s good to be home

IMG_6173 Even though I was born and raised in Las Vegas, I consider ‘home’ to be anywhere family is really, and right now that is North Carolina.  It has been so nice getting to visit with my mom, step dad and grandparents!

I just feel so relaxed and happy here.  It’s nice to have a break from school and work, but I really shouldn’t be taking too big of a break.

Our flight was without hiccups and we arrived late Wednesday evening.  Thursday we didn’t do a whole heck of a lot and slept in late, which was really nice.  We drove to Trader Joe’s and picked up a few last minute things.  For dinner I decided to make the Sausage Broccoli Pasta that is always a hit and my mom’s favorite dish.  It’s so easy and yummy!  She also had a bottle of Charles Shaw Chardonnay and it wasn’t all that bad actually.  I had a glass and a 1/2.

After dinner we decided to watch The Hangover.  I’ve never seen this one before and it was pretty darn funny!  I sure hope that doesn’t really happen in Vegas! lol

Of course there was some munchin’ during the movie and we broke out the stash of popcorn my mom has.  Think we have enough?  The Trader Joe’s Lite Kettle Corn is my fav and I had a small bowl of that mixed with the regular lite popcorn and a few small clusters of the moose munch.  That stuff is too rich!  I also had a glass of Celestial Seasonings Mint Green tea which is my favorite after dinner tea.

Today my mom had to work, but I just spent most of the rainy day prepping the sweet potato casserole, pumpkin pie and turkey for dinner while Chris and my step dad watched sports.

Here’s what I had for lunch while drooling over the Southern Living Magazine and their praline pull-apart bread recipe 🙂  A simple pressed turkey sammie with roasted red pepper hummus, muenster cheese and 1/4 avocado.  I think I could just read recipes all day . . .

IMG_6228I had an apple for an afternoon snack and my cat Tweety likes to lick the core!  So funny!

I was a little worried about the turkey though because my mom had only taken it out of the freezer a day and a 1/2 before!  It was only 14 lbs, but it needed at least 3-4 days to defrost.  So when I got up this morning I made a quick cold water bath for it, changed it a few times during the day and prayed that it would defrost and not get too warm.

At 2:30pm when I went to get the bird ready it was still kind of frozen in the middle, eek!!  So we ran some cold water down the cavity and pulled all the bagged middle stuff out.  It was actually the first time I have made a turkey all by myself!  After patting it dry, I rubbed the turkey and underneath the skin with this mix:

  • 4 tbsp butter
  • 1 tbsp dried thyme
  • 2 tbsp chopped fresh sage
  • 1-2 tsp poultry seasoning
  • garlic powder
  • salt and pepper

Place it in a roasting pan, breast up with 2 cups of chicken broth in the bottom of the pan.  Roast at 425 F for 30 min, then turn down the oven to 325 F and roast until the meaty part of the thigh reaches 165-170.  Be sure to baste it with the broth every 30 minutes or so.  Take it out of the oven and tent with foil for 20 minutes to rest.  This was the moistest turkey I think I’ve ever had!!  I was so relieved that it tasted good and everyone enjoyed it 🙂

My mom had a Charles Shaw Merlot, and while it was nothing to sing home about, it was an easy red that didn’t over power anything else too much.

I also made a sweet potato casserole from Cooking Light.  It was great, but next time I think I will reduce the sugar a bit more.

IMG_6245My grandma made corn bread stuffing and fruit salad.  We also had a green salad, honey baked ham, and Chris made some awesome gravy.  I’m not a gravy person, but his was really good!

DESSERT!  I made another recipe from Cooking Light called vanilla bourbon pumpkin tart, except I didn’t have a spring form pan or bourbon and made a gingersnap crust, so it’s kind of like pumpkin cheesecake.  I also doubled the spices of course 🙂  FYI a few teaspoons of amaretto in whipped cream is amazing!

Oh boy, I think I’m going to pop!  It was all so delicious.  I only had 1 glass of wine and 1 plate and I’m still full, but not uncomfortably full.  My biggest weakness is when we put all the food away I find myself taking more little bites and licking spoons darn it!

I think tomorrow my mom and I are going to wake up early and do a little shopping to try and find some deals.  Maybe we’ll stop by the Carolina Blonde Brewery for a little tour?  So many things to try and do still with the family, and I love that nothing of it has to do with work or school 🙂

BEST pumpkin pancakes. period.

IMG_4983 Happy Friday to everyone!!  This week went by pretty fast and I actually got some good gym time in, yay!  I think this weekend is going to be packed already, and there will be no room for dilly dallying like last weekend 🙂

Tonight for the Viva Bike Vegas Ride they are having a pasta party for all the riders and friends/family.  Frankly I could make a butt-load of pasta myself for $10, but I want to go and support Chris and chat with the other riders.  I’ve been having Chris eat predominately carbs towards the end of the week to maximize his stores and calories.  I also told him to go easy on the pasta.  Just stuffing your face the night before won’t help and will make you feel bloated and icky in the morning.  He still needs to make sure to get a substantial meal in, especially since it will start early in the morning and will last at least 6 1/2 hours.

Saturday is the ride!  Gosh, I think I’m more nervous than he is.  I don’t want my guy to ‘hit the wall’ and end up like that video I recently posted.  I think he’s going to do awesome, but I still worry like always 🙂 Consistency will be key and making sure to fuel up at every station.

This weekend I have to study for my research methods midterm on Monday . . . eek!  I also have to paint, organize and decorate the guest room for my mom when she comes in less than two weeks.  Wednesday I leave for the SCAN sports nutrition workshop at the Olympic Training Center.  Lots to do!

One of the high carb meals we had this week was breakfast for dinner!!  Who doesn’t like warm pancakes at any meal?!  I decided to make my favorite WW pumpkin pancake recipe from Pinch My Salt.  They come out golden, fluffy and full of spicy, pumpkin flavor.  You can find it here.

I added one vanilla bean and it was out of this world, bursting with intense vanilla flavor.

I put the rest of the pod in the sugar jar to give it some more vanilla flavor.  Yum!

Along with it I made a little omelet, with roasted red peppers, grilled chicken and spinach, and of course real maple syrup.  Yum!

This is really easy to prep before hand too.  Just separate the wet and dry ingredients and then mix together when you want to make them and enjoy!  I just couldn’t resist and had to have another one 😉

Each time I go to the farmer’s market I plan to get a new variety of mushrooms to try out.  This week I decided on this . . .

Looks very strange!  It’s a wild Oregon mushroom, but I can’t remember the exact name of it.  Maybe one of you mushroom experts out there can help.  It sure looks similar to a Maitake?  I’m not sure exactly what to do with it, but I was thinking of some kind of mushroom Bolognese, we’ll see!

lackadaisical weekend

Hope everyone else had a great weekend!  I just wanted to give a quick recap.  Overall my weekend was very unproductive, but there were some good eats!  This month I am working a little less hours, so I’m hoping my lackadaisical tendencies won’t be too detrimental.  I think this unfortunate lack of motivation always comes to me at the start of that certain time (wink, wink).  I don’t know what it is but I feel sooo tired, cranky and blah.  Needless to say, I was a bum.

Friday night we went to a high school dance show to see our friend’s daughter, and it brought back a lot of memories and made me want to dance again!!  Boy I miss it terribly sometimes.

Saturday morning I woke up pretty early and had a great urge to bake!  This was the extent of my motivation this weekend.  I saw Veggie Girl had made a banana butternut pecan bread recently and I thought that would be awesome because I had been craving quick breads, and had 3 large bananas getting browner and uglier by the minute on my counter.

Instead of butternut, I had a sugar pumpkin from the farmer’s market begging to be roasted up in the oven.  I also added about 1/3 cup chopped dates into the mix because I’ve been addicted to dates lately.  It turned out really good!  The only thing is I don’t think I baked it quite long enough at 55 minutes, and it probably needed a good 10 minutes longer.  I always seem to do this.  For some reason I get scared that I’m going to dry it out or something.  I would also reduce the nuts down to 1/2 cup, it was nutty!  It sure tasted yummy and Chris really enjoyed it.  I put 1/2 in the freezer, and the other 1/2, well, it’s already gone!  Chris REALLY liked it!

So then of course I had to break out my favorite quick bread topping, also known as heaven on earth . . . TJ’s Pumpkin Butter!

That was pretty much the extent of my Saturday during the day.  I did a little bit of wash and forgot about it in the washer, dorked around on the computer, and also tried very hard to concentrate on reading for school while doing this.  Not so good, but I was feeling blah.  Chris and I also did a few errands and ordered the thresholds to finally finish our floor, yay!

Saturday night we took Chris’ mom and step dad out for dinner at Maggiano’s since they are always so kind to take us out.  Have you ever been here?!  Oh my gosh the food is amazing, the portions are gigantic (good for leftovers), and the ambiance is nice too.  The service was a little slow, but I’ve always had pretty good service otherwise, plus they were busy!

IMG_4927 I didn’t want to drink too much, but Chris’ mom had ordered a glass of wine and I can’t really turn it down.  I just really enjoy a glass of wine with dinner.

Funny, I used to hate the stuff when I first tried it.  I had the Ruffino Chianti which is always a safe choice.

We sat by the window so it was pretty good lighting while it lasted.  Here is our view from the table . . .  Hello downtown Vegas!

We also decided to get the set dinner menu where you can choose 2 appetizers, 2 salads, 2 pastas, 2 entrees and 2 desserts!  Yikes, it was a lot of food.

We started out with the spinach salad, stuffed mushrooms and garlic bread.  Here is my plate . . .

Next came the pastas and entrees.  We got the beef braciole, which is one of my favorites there.  It is basically flank steak stuffed with veggies and meats and is very tender like meatloaf.  For pasta we ordered the spinach manicotti with red sauce instead of alfredo.  They ordered the roast chicken, along with fettuccine alfredo.  Their portions are just crazy.  Even the half portions are shareable.

When the waiter came out he had mistakenly ordered the cheesecake instead of the chocolate cake, so he said he would go bring us the chocolate cake too!!!  Oh my gosh, no stop it already please!  I was in dessert heaven and yes I did eat too much.  I was uncomfortably full, but it was really good.  Eating out like that always quickly brings me back to eating better again.  I just can’t do that all the time.  This week I have vowed to lay off the desserts because I probably ate enough calories for 3 days, yikes!

The chocolate mousse cake was amazing and gigantic.  You should have seen the size of my eyeballs as he brought this to the table.  I could only muster 2 bites.

Needless to say we had tons of leftovers and the rest of the cake and cheesecake went straight into the freezer not to be touched for at least a couple weeks!

Sunday was yet another pretty unproductive day.  I did make it to the gym for jump rope and body pump, but I think I was still recovering from my food and wine coma and didn’t quite feel right.  Chris and I also went out to Art in the Park benefitting the Boulder City Hospital Foundation.  This is an annual festival where tons of artists come and set up tents over a huge park and sell their awesome work/crafts.  My mom and I used to always go every year.  It was super windy, so we just stayed for a few hours and just perused the tents.

From now on I’m going to be pretty busy because my mom is coming to town in 2 weeks!!!  I’m so happy, but our guest room still looks like a storage shed . . .eek!  We still have to paint, get a bed and a comforter, finish the thresholds, and spruce up the rest of the house.  Of course I want it to be perfect for when she comes, but I’m going to try not to stress myself too much.

ravenous

Chris and I found a local cycling club called Green Valley Cyclists and we’re really excited to join.  They post different rides throughout the week and each ride is labeled either an A, B, or C (+/-) depending on the average speed, difficulty, extra help/stops, etc.  We decided to start out with a C ride this past Sunday to try it out, especially since I only have a slow mountain bike and only take a spin class once a week.  Boy, did it kick my butt!  ‘C’ rides average 10-12 mph and this one was 22 miles, their easiest ride ha!  ‘A’ rides average 18-25 mph and are usually 30-40 miles with minimal stops.  Maybe I could ride my car along side?  I guess I have a ways to go for that one!

With my mountain bike I was slowing everyone down!  I felt like I was pulling a giant piece of lead while everyone else was breezing by.  It got really hot and windy towards the end and I thought I was going to keel over.  I am also a very salty sweater and need to carry more Gatorade or those jellies with me to get more electrolytes.  I was like one big salt-lick when all the sweat evaporated lol  At least I powered through and finished 🙂  I think a road bike is the first thing on my list before I attempt another group ride, but it was a really good workout and fun to meet other cyclists.  I wish I would have remembered to wear my HR monitor to see the calories burned.  I was absolutely ravenous afterwards!!  I could have practically eaten anything and continued to eat throughout the day.  Does anyone else get like this with more intense exercise?  I think I about cancelled out any of the calories burned and then some I got so hungry.  But, I didn’t feel too sore the next day, so that must be a good sign 🙂

So before the ride I had an average sized bowl of cereal with a 1/2 banana (this is also the perfect post-workout fuel).  During the ride I had 3/4 of a homemade bar.  Right afterwards we had a chunky strawberry granola parfait thing from Jamba Juice, and then when we got home we had this . . .

Pumpkin Crème Brulee French Toast

This is the perfect brunch food that you can make in advance and it feeds a lot of people.  I love brunch food!  I first came across this idea at Nothing To It!, a great cooking school in Reno that I worked at for awhile in college.  This place was sooo much fun, and I’d really like to do something like that again someday.  I lightened this version up with some non-fat half-n-half and egg substitute.  I also added some canned pumpkin and extra spices to warm it up!

Yield: 8-10 servings (but probably even more)

Ingredients

  • 1 quart vanilla non-fat half-n-half (the original called for heavy cream!)
  • 1 1/4 cups egg substitute
  • 2 egg yolks
  • 1 cup canned pumpkin
  • 2 tbsp pumpkin pie spice
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/3 cup packed brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 rounds of Hawaiian Sweet bread, sliced
  • 5 slices whole wheat bread (I didn’t have enough of the sweet bread and had to use some of this)
  • butter and brown sugar for caramelizing on top

Mix the first 9 ingredients in a large bowl.  Grease a 9 x 13 baking pan and place 1/2 the bread slices in the pan like a jigsaw puzzle filling in all the gaps.  Pour half of the custard mixture on top.  Place the remaining bread slices in the pan (with the whole wheat in the middle) and top with the rest of the custard mixture.  It will look pretty wet, but it will get absorbed when it sits.  Cover and place in the fridge for 4 hours up to overnight.

Preheat oven to 350 F.  Let custard sit at room temperature for 30 minutes and then bake for 1 hour to 1 hour and 15 minutes, until slightly golden and no longer liquid in the middle.

Cut into your favorite shapes and place on a foil lined cookie sheet.  I like an offset diamond shape.  Put a little bit of melted butter on top, sprinkle with brown sugar and broil until the sugar browns slightly (Alternatively, you could sauté them).  As it cools, the sugar will harden and get crispy like crème brulee.  I like to serve mine with Greek yogurt for dipping, honey for drizzling and cinnamon for sprinkling.  You could also mix a little pumpkin into the Greek Yogurt.  Yum!

This dish is pretty filling, although it didn’t weigh me down and it definitely hit the spot after a long bike ride!

All together now . . . Since I had that fruit parfait earlier, I went easy on the fruit, but still had to have some of course!  Added an egg in the background for some extra protein and fat.  I just love egg yolk!

Pumpkin Waffled French Toast

I love having breakfast for dinner sometimes!  It puts a nice little spin on things and is so delish.  For my French toast, I don’t usually sauté it in a pan, but I like to put it in a waffle iron because it gets a nice and crispy crust on the outside while still slightly gooey on the inside. . . . the perfect combo!  This time I decided to try a pumpkin flavored batter.  I first saw this great idea from Lee, who made it here and also from Body Mind Soul (both great blogs I may add!)  I just thought the pumpkin was such a great idea, thanks!  There is a nice hum of pumpkin flavor in the background, but not too strong.  I had a little bit of the batter left over, which I think I’m going to put in oatmeal next time!  I also like to use Trader Joe’s cinnamon swirl bread to give it added cinnamon flavor because I’m a cinnamon addict!  Greek yogurt is the perfect medium for dipping and I’m loving the strawberries coming in season.  Even though I don’t eat bacon that often, there is nothing like the real thing and is perfectly fine to eat every once in awhile.  It tastes so yum!

Pumpkin Waffled French Toast

Yield

Serves 4-5

Ingredients

  • 1/2 loaf TJ’s Cinnamon Swirl Bread (about 6-7 slices) or your favorite french toast bread
  • 1 cup vanilla non-fat half-n-half (TJ’s brand) or you could use plain and add some vanilla extract
  • 1/3 heaping cup of canned pumpkin
  • 1/2 cup egg substitute
  • 3 tbsp dark brown sugar
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • Various sides:  I chose an egg with a sprinkling of cheese, good ol’ bacon, greek yogurt for dipping and strawberries.

100_2565 Simply place all the ingredients into a pan and mix together well.  Soak each bread slice in the mixture and place onto a pre-heated waffle iron on the highest setting, sprayed with cooking spray.

When each one is done and golden, place on a sheet rack on top of a cookie sheet, and place in a 200 degree oven to keep warm.

Rise and Shine

Mom was always right when she said that breakfast was the most important meal of the day. It gets our minds and bodies ready for the day and actually improves our mental functioning (and you thought you only needed coffee for that!) If we have a satisfying breakfast full of protein and fiber, it keeps us satisfied until lunch and prevents us from becoming famished and overeating. There is actually research that says people who eat a balanced breakfast every day actually weigh less than those who don’t eat breakfast. The reason? Well, eating breakfast gets our metabolism revving and prevents our bodies from thinking we are “starving” and hoarding the calories we do consume (which is usually more if we don’t eat breakfast). So for those of you who don’t eat breakfast because you aren’t hungry, or don’t have time, or . . . I encourage you to start the habit because your body will thank you.

Here are some of the things I eat for breakfast, along with some other quick “on-the-go” ideas:

  • Bowl of non-fat plain yogurt with some whole grain cereal and fruit (try Wallaby brand because it’s not as “tangy” as most yogurts).
  • Simple bowl of whole-grain cereal with skim milk and fruit.
  • Instant oatmeal (if using the packets get lower sugar) made with skim milk. I like to add a tbsp of peanut butter for satiating power, banana, lots of cinnamon and toasted walnuts.
  • Bull’s eye – simply cut a circle out of a piece of bread and saute and egg in the middle and top with a little shredded low-fat cheese.
  • Peanut butter and jelly sandwich with a glass of milk
  • Any good ol’ cereal bar, make sure it has at least 200 calories and enough protein to hold you over if that is all you will eat.
  • Cottage cheese Toast – I like to take a piece of toast, put peanut butter and jelly on it, top it with a scoop of cottage cheese and some fruit. It sound’s weird but is really good!
  • Turkey and Cheese stuffed in a pita pocket (who said it has to be “breakfast foods”?)
  • Banana boat – stuff one banana, some peanut butter, jelly, etc into a hot dog bun
  • The possibilities are endless!

Every once in awhile, Chris and I really enjoy having the traditional breakfast on the weekends. The kind of breakfast that holds you over well after lunch time. You know what I’m talking about . . . eggs, bacon, the whole she-bang. Well, I recently tried a great Whole Wheat Pumpkin Pancake recipe from www.pinchmysalt.com and it was to die for. So if you love pumpkin during the holidays, you should really try this recipe along with the other must-haves like scrambled eggs, bacon or turkey bacon, etc. Insteat of maple syrup we like to mixed pumpkin butter and cinnamon into non-fat greek yogurt which is really good.

Another great weekend breakfast recipe that we love, and also works well for company because you can make it the night before, is the Sausage and Cheese Breakfast Casserole from CookingLight. I’ve tweaked it a little bit and have used a couple great products from Trader Joe’s.

Whole Wheat Pumpkin Pancakes

Sausage and Cheese Breakfast Casserole

12 servings (serving size: about 1 cup)

Ingredients

  • Cooking spray
  • 12 ounces maple chicken breakfast sausage (from Trader Joe’s)
  • 2 cups 1% low-fat milk
  • 2 cups egg substitute
  • 1 teaspoon dry mustard
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon ground red pepper
  • 3 large eggs
  • 16 oz (about 1/2 loaf) Garlic focaccia bread from Trader Joe’s (you could use 16 1-oz slices of your favorite bread)
  • 1 cup (4 ounces) finely shredded reduced-fat extrasharp cheddar cheese

Preparation

1. Heat a large nonstick skillet over medium-high heat. Coat pan with cooking spray. Add sausage to pan; cook 5 minutes or until browned, stirring and breaking sausage to crumble. Remove from heat; cool.

2. Combine milk and next 6 ingredients (through eggs) in a large bowl, stirring with a whisk.

3. Cut bread into 1-inch cubes. Add bread cubes, sausage, and cheddar cheese to milk mixture, stirring to combine. Pour bread mixture into a 13 x 9–inch baking or 3-quart casserole dish coated with cooking spray, spreading egg mixture evenly in baking dish. Cover and refrigerate 8 hours or overnight.

4. Preheat oven to 350°.

5. Remove casserole from refrigerator; let stand 30 minutes. Bake at 350° for 45 minutes or until set and lightly browned. Let stand 10 minutes.

Sometimes I like to saute some vegetables along with the sausage like zucchini or mushrooms too.

Oh the Holidays!

I love this time of year, especially the smells of wonderful baked goodies coming from the oven, tempting the senses and taste buds! I think cinnamon is my favorite spice for sure because it’s great on pretty much anything sweet or savory. For as long as I can remember my grandma and I would bake cookies and goodies for the holidays for family and friends. My grandma is particularly known for her sugar cookies and fudge, whose recipes were passed down from my great grandma. I would tediously plan the line up, along with those special people in my life who would receive such yumminess. Baking all day and night, I was perfectly content, although exhausted and relieved when they were all finally wrapped and sent.

My fiancee Chris and I decided to give tins to family and friends filled with a variety of festive homemade treats again this year. Usually there are always a couple tried and true recipes that everyone loves and are requested year after year. This would include the pumpkin chocolate chip squares and maple spice cookies from martha stewart and CookingLight, respectively. We also tried to make two new items this year, including peanut butter peanut brittle from a fellow R.D. friend and chewy chocolate chip gingerbread cookies from Martha Stewart.

Even though the holidays are filled with goodies that are usually high in calories that can expand our waste lines, just remember moderation and activity are key. We don’t want to deprive ourselves or attempt to lose weight during the holidays because that just sets us up for failure and disappointment with ourselves. We need to think of our calories as a budget, so if we decide to indulge on a couple cookies, maybe skip that glass of wine and go for a nice long brisk walk instead. Don’t let yourself get discouraged and give up trying to eat healthy all together. If you have one mishap (say have your pie and eat it too) don’t throw it all out the window, just get back on track. Every day there is a choice we make and every day is a fresh chapter to health. So go ahead and have the holiday goodies, but make sure you keep on track, stay focused with portion control, fit in some activity and have fun with family and friends! That’s really what the holidays are about, right?
