Hi guys!  I hope everyone is doing well.  Summer is definitely here in the West and things are warming up!  Today it hit 94 degrees, wow I need to get used to this again.  I went for a ride today and it was hot!  I also can’t believe that some over on the east coast are getting snow.  Craziness.  Things are going pretty good over here at eatingRD, just have been busy!  I have a few simple recipes to share for when you just don’t feel like cookin’  🙂 (more…)

back on the bike

Holy moly, I actually rode my bike for the first time in 3 weeks this past weekend!!! yippeeeee!  Well, I was sucking air like I had never gotten on a bike before and blowing snot rockets like you wouldn’t believe (watch out), but I actually made it without keeling over.  Yes. Now begins the long journey to get my stamina back.  It’s amazing how quick it goes.  I’m trying not to think about it too much and push ahead to get stronger!   (more…)

frugal eats + a confession

Alright, alright, I confess!  So I had a slip-up with the Eat In Month Challenge last weekend and it wasn’t a mistake 😉  With Chris being away for work, I needed some socializing and I couldn’t help NOT going out with girlfriends!!  I hadn’t hung out like that in awhile and it was fun!  A nice dinner and then a round of cosmic bowling left us so tired there was no room left for dancing, just yawning.  I think I’m getting old when 9:30 rolls around and I’m pooped!  But I do sport those bowling shoes well . . . hehe   (more…)

Hey there eat in month-ers!  How has the challenge been going?  And if you’re not participating in the challenge this year, how are your goals and planning for the new year coming along?

I truly believe that large goals may seem unattainable at first, but with small, measurable, and realistic steps, it can be done!  Dream big, but start small.  In other news and dreaming big . . . I actually reserved our wedding spot!!! eeeek!  I can’t believe after 4.5 years, it’s actually for real now.  Talk about planning, but I love to plan!   (more…)

loooong ride!

Hello!!!  I’m still here I promise!  Before I recap my long and freakin’ fantastic bike ride, I want to pick up with the end of the week . . .

I’m finally done with my semester and I did well on my stats final, yay!!  I’m planning on getting my last class credits done with another stats class over the summer; then it will be two semesters of thesis and I’ll have an MS in Exercise Physiology!  After the final, my classmates and I had lunch at a Mexican Restaurant called Cozymel’s since it was also Cinco de Mayo.  It was so nice to just sit, hang out and not have to worry about being anywhere.  I didn’t have anything alcoholic, but there were quite a few pitchers of margarita going around 🙂  I had two chicken and beef soft tacos that came with a side of rice and beans.   (more…)

crockpot meatloaf + a winner!!!

I’m a big fan of meatloaf because it’s fairly easy to make and leaves you with a butt-load of leftovers which are great for sammies, crumbled and mixed into pasta, or just as is.  This time around I decided to experiment with my original stuffed meatloaf recipe, but in the crockpot.  I think this is now my preferred method!!  I used extra lean beef which is key, so there isn’t too much extra fat in the pot.  It comes out super moist and perfectly formed because the temperature is low enough that the gooey cheese in the middle doesn’t have time to escape like it sometimes tries to do!

mangoes are not in season

After studying for a bit, and having a nice chat with my mom, it was time to get dinner started!  This is really one of our favorites and is pretty easy to make.  I also served it with a mango and black bean salad.

I’m a big fan of summer squash and many vegetables can be the perfect vehicle for stuffing practically any kind of filling you can imagine inside.  I use lean ground beef in this recipe, but there is also quinoa, brown rice, cous cous, oatmeal, barley, lentils, and the list goes on and on.  Grains and such have such a wonderful natural binding ability that using them as stuffing can be the perfect compliment to something as neutral and naturally sweet as summer squash.

Plus summer squash cooks relatively quickly which is always a plus!  (more…)

going crazy with CSS

Whew!  I’ve been trying to work on designing the new template for many hours today and I think my head is about ready to explode!!!  I first got a theme template from a site called VivaThemes and I was not impressed at all.  I liked the overall look of the theme, but I also spent many hours to find it was not user-friendly, customizable and the customer service was terrible.  Even worse I couldn’t get a refund, which is a load of crap.  I would not recommend, but I won’t rant on about that . . .

I did find a new theme that is much more user friendly and I’ve been spending more time trying to figure it out.  While I will have to eventually code certain things, it just seems better so I guess it’s worth it.  ugh!!! (more…)

out of this world banana puddin’

I couldn’t really figure out what the heck to title this post since it’s pretty random, but after much contemplation I figured it should be titled after the epitome of all banana puddings I’ve ever had. . .

After breakfast most of my morning was spent doing laundry and catching up on bloggies, so we ended up not getting out of the house till later.  My mom wanted to find a new laptop computer so we ventured out to Best Buy and found a pretty good deal on a Dell.  My mom is not savvy with computers, so Chris helped her out 🙂

Breakfast was one of my simple staples . . . this one included Nature’s Pride pumpkin granola, TJ’s honey O’s, TJ’s shredded wheat and cinnamon Puffins.  I topped it with 1/2 a sliced naner, frozen blueberries (I love how they turn the milk blue!) and 3 walnut halves.

I had a pretty simple lunch too . . . An Orowheat sandwich thin (I think I like these!), spread with some cooked sweet tater, sliced TJ’s tofu, avocado and muenster cheese.  Then I pressed it in the foreman grill with some carrots and hummus alongside.  It was yummy and just the right size!  I love adding cooked sweet taters to pretty much anything because it lends a subtle sweetness 🙂

Among the many food stops that we wanted to try to make on our trip here, one was Gary’s BBQ which is known for their homemade banana puddin’.

Everything is very reasonably priced and the waitress always calls you ‘hun’.  I just think this is too cute because we don’t get that Southern hospitality in Vegas!  We first found out about Gary’s when it was featured in Southern Living magazine.  Chris had a few bites of their pulled pork sammie just to try it and really liked it.

Their pudding is rich, ultra thick and to die for!  It’s definitely worth the drive.  I wish my mom and I would have shared one because I forgot how mondo they are.  I could only finish about 1/3 of it and then I was spent.  I ate too much, but this stuff is better than ice cream and just as deadly lol

After a successful stop at Best Buy, we wanted to look at a few other nearby boutique shops for fun, but Chris slammed his finger in the door as we were getting out and we had to head back home.  Ouch!  But he is doing fine now 🙂

For dinner I whipped up some hearty meatloaf, roasted squash, parsnips and spaghetti squash.

It was my first time making spaghetti squash and I think I’m in love!!  It is so simple to make and is so delish.  This will definitely be a staple in our house from now on, especially because it makes a ton and this one squash was only about $3.  In one cup of plain, cooked spaghetti squash there is only 42 kcals and a fairly good amount of vitamin C and fiber.  Yum!

For this I cut it in 1/2 and roasted it cut side down at 375 F with a bit of water in the sheet pan for about 30 minutes.  Then I turned it over, topped it with about 1/2 tbsp of butter in each half along with some salt, pepper, and garlic powder and continued to bake it until soft.  I also added some parmesan cheese once it was done.  Yum!

Alongside we tried a new Malbec that we found at a local wine store called Total Wine.  It was nice and full with rich, chocolate-y undertones, but it wasn’t out of this world.  I much prefer the Layer Cake Malbec.

I’m looking forward to New Year’s!  We made reservations at a local wine lounge/restaurant that’s going to have some live entertainment which should be fun.  Hope you all have a safe and happy New Year’s!!
