back into the swing of things

Man it is tough coming back after having such a nice vacay!  CSN Stores contacted me recently and asked if I would like to do a review of one of their products, which may just make the transition to reality a little easier 🙂  I’m not sure what it will be yet, maybe it will be a sectional sofa?!  Well, not sure about that, but we sure need a new sofa.  Ours is ancient and we have to reinforce it underneath with a broken down cardboard box.  No joke.  It’s like once you sit in it, you can’t get up because you sink so far into it. literally.  Look out for a review soon, hopefully it will be something fun!   (more…)

first century ride!

This ride was definitely one of the most challenging rides I’ve ever done, but I am so happy that I made it and I can finally say that I’ve biked 100 miles!!! (well, it actually turned out to be 106)  It is an amazing and empowering feeling . . . and although I was a bit stiff the day after, I actually can’t wait to do it again crazy as it may sound 🙂   (more…)

and so it begins

The countdown that is!!!  aaaaah! In about 6 days I’ll be riding my first century bike ride in Napa, CA and supporting the great cause of the LiveStrong Foundation.  I really can’t believe it.  honestly.  When Chris and I first started getting somewhat serious into cycling, and he started doing century rides, I thought . .  nah, I can’t imagine riding 100 miles?! Now, about 4 months of training later, I feel pretty darn strong and 65 miles isn’t all that bad, so there’s no turning back now.  This is it!   (more…)

loooong ride!

Hello!!!  I’m still here I promise!  Before I recap my long and freakin’ fantastic bike ride, I want to pick up with the end of the week . . .

I’m finally done with my semester and I did well on my stats final, yay!!  I’m planning on getting my last class credits done with another stats class over the summer; then it will be two semesters of thesis and I’ll have an MS in Exercise Physiology!  After the final, my classmates and I had lunch at a Mexican Restaurant called Cozymel’s since it was also Cinco de Mayo.  It was so nice to just sit, hang out and not have to worry about being anywhere.  I didn’t have anything alcoholic, but there were quite a few pitchers of margarita going around 🙂  I had two chicken and beef soft tacos that came with a side of rice and beans.   (more…)

nice day for a ride!

Well, the weekend has come and gone and I can’t believe I’m sitting here and it’s already 9:00 pm PST on Monday, geezsh! I guess this amazement in time mostly stems from the fact that I spent pretty much all the afternoon on a exhausting and glorious 56 mile bike ride, yay!  I was hoping to get in 60, but when I started riding around my neighborhood to get in some extra miles, eyeing my Garmin like a hawk for each precious mile, I figured, eh I better head on home.  Plus my legs were a ready for some rest!

Just a quick, itsy bitsy weekend re-cap . . .   (more…)

windy century

It seems like it’s been nothing but WIND WIND WIND here! ugh, one day it’s beautiful, when of course you have to be inside and then all the other days it’s like stepping into a non-stop blow-dryer!  hehe  Well, I’m happy to report that Chris survived his 2nd century ride with the Tour de Cure despite the gale force winds from HELL today!!!  Yay!  I helped to volunteer at a rest stop for some of the day 🙂

Rewind to last night . . . I decided to make apple-quinoa stuffed kabocha for for a great pre-race fuel dinner.  I just love this recipe!  It’s also really versatile and great for you.   (more…)

birthday celebrations + dreaming of carbon

Where did the weekend go?  I’m sorry I seem to ask this every weekend, but it’s true!  I’m sure you all feel the same trying to get every precious amount of ‘free’ time in to get everything somewhat caught up.

Well, this weekend was a ton of fun!  Here’s to a little re-cap, some good eats, fun times with friends + a nice long bike ride . . .   (more…)

tired legs

Happy Tuesday!  Boy these days and weeks are flying now and I can hardly believe Spring is coming!  Well, here in Vegas anyways.  We’ve had some days in the upper 60s and it’s supposed to be 77 F on Thursday?  I just hope we can have a little spring weather before it’s full-blown HOT Vegas summer.

This morning I honestly wasn’t feeling like riding into work.  I wasn’t sick or anything, I just felt ‘off’ and tired and knew it was going to be a battle to convince myself to just do it.  I finally (more…)

Sorry I’ve been MIA lately!  This week started out kind of slow, and then BAM! it’s Friday already?  my goodness.  I didn’t have my computer with me last night since I rode into to work, so I didn’t get a chance to post.  It’s been a pretty good week and I’m so glad you guys enjoyed the doggie pictures!  I’ll have to include more of those 🙂  There’s nothing like cute pictures of doggies to brighten the day 🙂

Besides a re-cap of my ride and various eats, I will announce the cooking gadget winner too!  (more…)

rockin the ride to work

Happy Tuesday!!  Honestly I was thinking ‘It’s only Tuesday?!’, but overall it’s been going good so far.  In my last post about goals and blah, blah, blah I mentioned that I want to start biking to work at least while the weather is so nice here.  Once it hits summer, I’m probably going to have to get up and ride at 4 am, because by 5:30 it’s usually already near 100 F.  But for this week, highs are near 70 F!

Our morning started pretty early when   (more…)
