chicken fajitas + giveaway winner!

Sorry I’ve been MIA lately!  This week started out kind of slow, and then BAM! it’s Friday already?  my goodness.  I didn’t have my computer with me last night since I rode into to work, so I didn’t get a chance to post.  It’s been a pretty good week and I’m so glad you guys enjoyed the doggie pictures!  I’ll have to include more of those 🙂  There’s nothing like cute pictures of doggies to brighten the day 🙂

Besides a re-cap of my ride and various eats, I will announce the cooking gadget winner too! 

Wednesday was Registered Dietitian Day, as many of you well know, and the Southern Nevada Dietetic Association had a nice meeting at Cooperative Extension where I work, with a presentation by Bob Morris on the Slow Food Movement and local produce here in Southern Nevada.  I was so excited and enthralled for the entire thing, I just LOVE this stuff!

Slow Food is an idea, a way of living and a way of eating. It is a global, grassroots movement with thousands of members around the world that links the pleasure of food with a commitment to community and the environment. — slowfoodusa.org

Many believe that nothing can grow here in the desert, but it’s pretty amazing to find that actually many varieties of fruits and veggies can & do grow well here!  They have a research garden that is used for experimenting with many different plant varieties and they also give guided tours.  There is also a great farmer’s market that is held every Thursday and was started with the Mario Batali restaurants and the Producer to Chef program that Bob oversees.  In the morning the 3 Batali restaurants here in Vegas take their pick of the produce from local farmers, and then they open it up to the public after that.  They have some really great things and I try to make it there on my lunch hour if I can since it’s not too far away.  I would absolutely love to have my own mini garden some day!  I’m so jealous of Nicole 😉

I rode into work again yesterday and it actually is getting better!  yay!  yes, I am still slow as molasses, but I feel much stronger which is progress.  Oh man, it was a chilly ride in the morning and I could hardly feel my fingers and toes the whole time, but it was actually fun!  I caught myself breaking a big smile a few times 🙂

I pretty much munched and munched throughout the day . . .

For breakfast I had some strawberry-rhubarb muesli which I brought into work the day before.  It was really refreshing and it may seem weird at first, but I added a secret ingredient to give it extra strawberry milkshake-like flavor.  Here’s what went into the mix:  (sorry no picture!  food was on the mind when I got in after the ride, but I will be making this one again!)

  • 1/3 cup Bob’s Red Mill Muesli
  • 1/4 cup plain oats
  • 1/3 cup NF organic milk
  • 1/3 cup Wallaby plain LF yogurt
  • 1 tsp chia seeds
  • 1 tsp hemp seeds
  • 1.5 tbsp homemade strawberry-rhubarb jam
  • 1/2 scoop Strawberry Recoverite — it actually worked out well!
  • handful of grapes, chopped
  • 1 large kiwi, chopped

A little while after that I decided to have 1/2 a naner for a snack.  This naner sure looked decrepid!  When I got them at TJ’s last Friday they were green as green could be and hard as a rock.  Just finally they are starting to ripen, but certainly don’t look that pretty.

Soon enough it was lunch time, so I broke out the leftover fajita quesadilla + greek yogurt and guac for dipping.  There’s some grilled chicken, bell peppers, onions and TJ’s light Mexi cheese in there I swear!

I was still feeling munchy and had a little snack bag of Annie’s honey graham bunnies (omg so addicting!  I can’t have these in the house), handful of pistachios, 3 pb pretzels and 3 dates.  mmm I love snacking!


Next up, it was getting close to getting ready to head home on the bike so I grabbed the other 1/2 of the naner and about a cup of water.  By this point I had gone through about 2 L of water.

And I was off!  I decided to try a different route going home because I wanted to avoid the treterous hill and try to make somewhat good time.  Well, I got lost a few times because there are a lot of different turns, going through neighborhoods, and the paths don’t quite hook up right in some spots.

I still managed to make fairly good time and averaged 15.7 mph!  What a difference no wind makes, weeeeeeee!  I actually didn’t feel like I was going to die or eat the entire fridge when I got home : o

As I rolled on home at about 4:50pm, I soon realized that I had forgotten my key, doh!!  I didn’t even think about it this morning!  So, as I waited for Chris to get home I messed around with my phone like a big doof 🙂

I even contemplated about riding around some more somewhere . . .

Naaah, I just waited around for about 15 minutes and streched a bit 🙂

As soon as Chris got home, and we fed the barking hound Buster (he barks at us when we get home and he knows it’s feeding time), I quickly hopped in the shower and then it was time for, you guessed it . . .  LEFTOVERS!!!

I made chicken fajitas the other day, and it’s been quite the fill of Mexican lately 🙂  Yum!  I am certainly not complaining!  I really like this recipe, especially the guac.  I think I could just eat avocados by the spoonful 🙂

There may have been a protein cookie consumed as well 🙂  these are tasty!

Sorry there is no FYF post today, but I am working on looking at my take on fat loading for endurance athletes and adding protein to traditional electrolyte beverages.

This weekend my good friend is having her bridal shower, we may be visiting a new little Basset named Emma that may be joining our family, and I would love to tackle a longer ride this weekend, at least 50 miles?  haha well, we’ll see 🙂 The weather looks like it’s going to be gorgeous!

    I am jealous you went to an SNDA event. I miss SNDA! SNDA was my life for a while and very good times with good people, so I do really miss it. I am glad you enjoyed the presentation.

  6. Have fun at the bridal shower and those chicken fajitas look good 😛 And I hear ya on the camera/phone issue. Before I got my new camera I was taking pics for my blog with my BB, and everyone would be like, “NO! They’re awful!” Ha-ha…then, finally, the bf bought me a new camera! LOL prolly sick of looking at my BB pics! Enjoy the weekend!
