Protein Cookies

These are a bit healthier alternative when it comes to cookies.  Of course they won’t have the same exact texture as your traditional, butter-laden cookies, but they are tasty!  They aren’t packed with protein, but have a pretty good 5g each from the added protein powder.  Plus they are nice treat when the craving for something sweet arises!

Protein Cookies

Yield:  15-17 cookies

  • 3/4 cup quick oats
  • 2/3 cup Vanilla protein powder (I used Sun Warrior brown rice protein)
  • 1/8 of a cup dessicated coconut (optional)
  • 1/4 cup chopped dates
  • 2 tbsp Ghirardelli dark chocolate chips (60% cocoa)
  • 1/4 cup flax meal (I used flaxmatters.com flax with blueberry)
  • pinch of salt
  • 1/2 tsp of cinnamon
  • 1/2 tsp baking powder
  • 1/3-1/2 cup honey
  • 3 tbsp smooth peanut butter
  • 1 tsp vanilla extract
  • 1-2 tbsp canola oil

Simply mix all the dry ingredients and add the wet ingredients.  These will be sticky!  Place 15-17 spoonfuls of batter on a greased cookie sheet (I used a Silpat).  Bake at 350 F for 10-12 minutes.  Watch them closely or they will dry out.
