nice day for a ride!

Well, the weekend has come and gone and I can’t believe I’m sitting here and it’s already 9:00 pm PST on Monday, geezsh! I guess this amazement in time mostly stems from the fact that I spent pretty much all the afternoon on a exhausting and glorious 56 mile bike ride, yay!  I was hoping to get in 60, but when I started riding around my neighborhood to get in some extra miles, eyeing my Garmin like a hawk for each precious mile, I figured, eh I better head on home.  Plus my legs were a ready for some rest!

tired legs

Happy Tuesday!  Boy these days and weeks are flying now and I can hardly believe Spring is coming!  Well, here in Vegas anyways.  We’ve had some days in the upper 60s and it’s supposed to be 77 F on Thursday?  I just hope we can have a little spring weather before it’s full-blown HOT Vegas summer.

This morning I honestly wasn’t feeling like riding into work.  I wasn’t sick or anything, I just felt ‘off’ and tired and knew it was going to be a battle to convince myself to just do it.  I finally (more…)

beluga lentils & quinoa stuffed kabocha

I found some pre-cooked black beluga lentils at TJ’s and love their nutritional punch!  Chrysta had posted a killer looking lentil and beet salad a little while ago, and ever since then I’ve been thinking I need to make some lentils! 🙂

Lentils are great for a filling, fiber-rich protein source.  These ones were great because they were already cooked too!  I had a local kabocha squash on hand from the farmer’s market, so I wanted to incorporate them somehow.  When I saw that I still had some of TJ’s Harvest blend and some quinoa in the pantry I knew just the thing to do . . . stuff it! oh yeah (more…)
