windy century

It seems like it’s been nothing but WIND WIND WIND here! ugh, one day it’s beautiful, when of course you have to be inside and then all the other days it’s like stepping into a non-stop blow-dryer!  hehe  Well, I’m happy to report that Chris survived his 2nd century ride with the Tour de Cure despite the gale force winds from HELL today!!!  Yay!  I helped to volunteer at a rest stop for some of the day 🙂

Rewind to last night . . . I decided to make apple-quinoa stuffed kabocha for for a great pre-race fuel dinner.  I just love this recipe!  It’s also really versatile and great for you.  

All the goods . . .

Sautéing away the apple sausage, mushrooms, bell pepper, apple  . . .

This is one of my favorite spice blends . . .

It turned out really tasty and satisfying!  I just adore kabocha.

Along with the usual suspect side salad of romaine, toasted walnuts, cranberries and herbed goat cheese 🙂

After getting our things ready for the next day, Chris and I headed to bed fairly early at 9:30pm to get ready for our 4:30am wake up call :O zzzz  I think I was still half asleep when the alarm went off and it took me awhile to ‘wake’ up.  I made Chris a sprouted cinnamon raisin bagel with pb and naner + a bowl of shredded wheat with frozen blueberries.  I had 1/2 the bagel and about 1/3 cup micro’ed egg white.

And then we were off after scrambling for a few things last minute.  I swear we are never on time.  Good thing we weren’t too far from the start!

Chris got to the registration tables . . .

And was ready to hit the road!

Then, I headed for my stationed rest stop, which was pretty close to the start so we didn’t anticipate too many people stopping.  We even cheered on some riders that weren’t a part of the Tour de Cure!  Well, it was fun anyways!

I munched on an orange and a few pretzels and raisins.

Here come our first riders!!!  but of course they whizzed right by . . .

Chris and JT stopped by to say hello.  JT is a great guy that owns a bike shop here in Henderson called JT’s Bicycle which is an awesome shop that we go to all too frequently 😉

And a train came by!

Then the worst possible thing that could happen pretty much did.  See that poll in the picture below? . . .

Well, I knew that wouldn’t be a good thing, especially with riders looking at the rest stop and coming from a down hill. This one rider wasn’t paying attention and was looking to see if he wanted to stop and ran right into the poll.  hard.  It was absolutely terrible.  He was screaming in pain and we had to call an ambulance.  He definitely broke his leg and they had to of course splint it. omg.  They gave him morphine but he was still in a lot of pain.  I just hate seeing people in pain, but they were taking him to the hospital and hopefully everything worked out 🙁 gosh, just one second and bam your life can change just like that.  I had to text Chris right away to make sure he was okay.  I was freaking out each time another rider came by the rest of the day.  Just have to be so careful.

Anyway on a more positive note, I stayed till about 10:30 for my shift and came back home to clean and get a few things done.  I grabbed a quick yogurt/cottage cheese mix + BSN Dessert banana cream, topped with cereal and frozen blueberries.  I think I’m addicted to BSN dessert protein and need to order some!

I also made some tasty banana bread from Gelareh!  It was really good and has a healthier profile.  I also used a packet of BSN banana cream for some of the flour and had dates instead of raisins.  For next time I think I will add a lot more cinnamon because I like it super spicy 🙂  This will be great to have on future rides!

I also used this chunky TJ’s applesauce that I am in love with.  I like to add it to oatmeal and muesli because it gives it great texture and isn’t too sweet.

Of course I had to sample 1/2 a slice, yummy!

And pretty soon it was time to pick up Chris!!  The winds have just been horrific today and I can’t believe they powered through.  Riding time it took 7 hours and 4 minutes, but overall with stops it took about 8 hours.  Chris said he ate quite a bit on the ride and felt really good until the terrible winds towards the end.  Right now at the moment he is sleeping and veggin’ on the couch 🙂

I brought him a recovery smoothie when I picked him up . . .

This one contained:

  • 1/2 cup 1% milk
  • 1/2 cup coconut water
  • 2 scoops Recoverite Strawberry
  • 1/2-1 cup frozen berries
  • 1 small banana

It was really good, I had to drink the little bit that couldn’t fit in the bottle 🙂

Congrats Chris!

Mostly everyone is gone by the time the century riders get back, but we did get some chicken.  We took most of this home of course for leftovers!

And the other great thing about rides and getting back at the end . . . FREE stuff!!!!  Looks like we’ll have bars for months and I need to make another batch of banana pudding and banana bread 🙂

Well, I think I’m going to have some leftover kabocha for dinner and tend to my tired guy.  Hope you’re having a nice Saturday!  Enjoy it and live it for the moment because things can change all too quickly, and give a big hug to those you love!

  4. Congrats to Chris for not running into that poll!! Oh my gosh, I can only imagine the feeling of thinking someone else would run into that poll. I seriously think I would have gone and stood by it, or at least put a giant cone next to it!! That’s crazy, I can’t get over that the guy broke his leg!!
    It’s funny that you ask about anything having changed our perspective on life. Just last night Nick and I were talking about how lucky we truly are, even though we don’t have much (in terms of money, that is…..not yet!). We are healthy, moving into a new house, we love ours jobs, and we’re always laughing. That’s more than many people, so we re-focused last night and vowed to stay positive for as long as possible!

  5. Gina, I know, I was just on edge every time someone rode by. I wish they would have had a cone or something, you’d think?
    that is so nice to have an ‘ah ha’ moment, and it’s amazing how much we do truly have even though it may not seem so 🙂 I am going to try to look at the big picture of things and be aware of any negative thoughts that try to creep up 🙂

  6. How could they actually let the darn pole be there. Really, no one foresaw that as a problem? Sometimes I just don’t know! Otherwise I am sure it was really beautiful out.

    I know what you mean about wind in Vegas. Sometimes it was too much. Oh, and I love the looks of the quinoa dish.

  10. Julie, I know, right? I guess it is to prevent ATVs from riding on the paths, but they can easily go around it in the dirt. Sorry about running 🙁 it is really hard on my knees and joints too. I’d still like to think I want to try for a sprint triathlon in the future, but we’ll see 🙂 Plus this way with more biking you’ll be good and ready for your honeymoon Tour de Italy, yay!!
