easy din dins

This week I’ve been resorting to fairly easy fix ‘er uppers for dinner, mostly because it seems like time is of the essence lately.  Is there really ever enough time?  Sometimes I have this crazy hope that someday we will be able to freeze time in its tracks, just for a few hours or so to get caught back up.  I could see this being a major problem, but it’s always nice to dream!

The wind has greeted us yet again here in the desert, and when it does it really does!  I think last night we had gusts up to 63 mph and I thought our townhouse was going to break away from the foundation and take us away like the Wizard of Oz. Well, we’re still here safe and sound, but it hasn’t left much by way of bike riding, especially in the afternoons when it really kicks up.   (more…)

whirlwind wedding weekend

Hello!  Boy this last weekend flew by and was jam-packed with fun wedding festivities and new road bike adventures!  I’m still playing catch up and felt pretty terrible today with the lack of sleep catching up with me and my tummy wasn’t happy for some reason.  I swear I felt like someone hit me over the head with a hammer and didn’t let me sleep all night, but I didn’t even drink anything!  Weird.  Anyway, I thought I’d do a quick re-cap of the weekend.  Hope you all are doing well, I have so much to catch up on!  I can’t post most of the wedding and bachelorette party pictures for obvious reasons, but by clicking on this link to read more you understand that there are a few pictures that involve adult content and are not safe for work!  (more…)

crockpot meatloaf + a winner!!!

I’m a big fan of meatloaf because it’s fairly easy to make and leaves you with a butt-load of leftovers which are great for sammies, crumbled and mixed into pasta, or just as is.  This time around I decided to experiment with my original stuffed meatloaf recipe, but in the crockpot.  I think this is now my preferred method!!  I used extra lean beef which is key, so there isn’t too much extra fat in the pot.  It comes out super moist and perfectly formed because the temperature is low enough that the gooey cheese in the middle doesn’t have time to escape like it sometimes tries to do!

It’s been such a lovely day today that I don’t want this weekend to end!!  Well, don’t I say that every weekend? 🙂  The weather is certainly warming up here in good ol’ Vegas and it’s actually quite HOT!  I hate to say it but we had to turn on the AC last night since it was 82F inside.  I can’t sleep unless it’s at least 79F, because I’m like a radiating furnace once I go to bed.

Last night I couldn’t really decide what to have for dinner because when I went grocery shopping for the week on Saturday, I somehow forgot about Saturday night!   (more…)

california pizza kitchen love

Friday night after getting home from work, all I really wanted to do was go out to eat and relax!  It has just been one of those weeks if you know what I mean.  I had a few snacks because I was starving waiting for Chris to get home and I had even contemplated going out to eat by myself!  I’ve actually never gone to a sit-down restaurant alone before.  Yes, I’ve been to places like Pei Wei and Panera Bread, but just not full-service, isn’t that funny?  Have you?

Chris finally made it home and we headed out, indecisive as usual.  Most of the time we hop in the car and then try to make a last moment decision before turning off at the exit.  This time, we passed a few of the exits we were thinking of and finally made our way a little further to California Pizza Kitchen.  I’m so glad we went!  It was fun to walk around Town Square and the meal was really tasty and not too expensive for two.   (more…)

FYF: vitamin D in athletic performance

Well, I decided for the BH bike because it just felt really good when I got somewhat fitted and rode it around for a little bit, but I went to buy it yesterday to find that the frame is not quite right for me.  I have really long legs and a short torso so the seat post was a bit too high, not far enough down into the seat tube and could risk breaking 🙁  I was kind of bummed to be honest because my heart was finally with a decision, but there are other options! . . .   (more…)

cheesy goodness

I don’t eat a lot of butter and full-fat cheese all too often, but when I do, it sure is glorious! There’s nothing like the rich and succulent ooey gooey goodness that comes with cheesy baked casseroles. Even just a nice little piece is more than satisfying. One of the top recipes I wanted to try in Giada’s new cookbook since getting to meet her, was cheesy baked farro.  Of course, who wouldn’t love anything enveloped in cheesy goodness?  I also wanted to try my hand at farro for the first time.   (more…)

bike decisions + falafel pita

Well, it’s been another blustery day, ALL day!!  I think tomorrow we are supposed to get even more wind and isolated thunderstorms, nice.  Chris and I had a pretty low-key day.  I was able to get to a body pump class in morning, as well as some wash and random organization of my desk that is still somewhat a mess right now!

I’ve had a few bites on my bike since listing it for sale on CraigsList, but it is proving a challenge to actually get a hold of them and organize a meet-up.  Chris got it all cleaned and lubed up for me so I don’t want to ride it and dirty it up now 🙂 I also need to figure out a new one hmmmm . . . I’m still loving the BH Speedrom, but I’d like to see if I can get this frame with Ultegra components.   (more…)

windy century

It seems like it’s been nothing but WIND WIND WIND here! ugh, one day it’s beautiful, when of course you have to be inside and then all the other days it’s like stepping into a non-stop blow-dryer!  hehe  Well, I’m happy to report that Chris survived his 2nd century ride with the Tour de Cure despite the gale force winds from HELL today!!!  Yay!  I helped to volunteer at a rest stop for some of the day 🙂

Rewind to last night . . . I decided to make apple-quinoa stuffed kabocha for for a great pre-race fuel dinner.  I just love this recipe!  It’s also really versatile and great for you.   (more…)

wholefoods giftcard raffle!!!

Hi there!  Happy Friday!  I was able to make it to a great spin class this morning and my legs are getting back into the swing of things 🙂  I was still a little sore from a killer kick-my-butt box class Wednesday night.  That class always kicks my booty 🙂  I’ve also been trying to make sleep my number one priority and to get to bed by at least 10pm.  I usually get caught up on blog reading late into the night, hence my lack of reading/posting 🙁  I’ve been lacking in the sleep department and I can totally tell how it effects everything, so I need to change that for the better!

Last night I tried nutritional yeast for the first time on baked kale chips and I think I really like it!  It has a nice, toasty ‘cheesy’ flavor along with a great amount of B vitamins, protein and fiber.  Why hadn’t I tried this before???  Averie has some killer nooch recipes (as she calls it), and they look quite tasty.   (more…)
