girls day out + flax-date waffles

It’s been such a lovely day today that I don’t want this weekend to end!!  Well, don’t I say that every weekend? 🙂  The weather is certainly warming up here in good ol’ Vegas and it’s actually quite HOT!  I hate to say it but we had to turn on the AC last night since it was 82F inside.  I can’t sleep unless it’s at least 79F, because I’m like a radiating furnace once I go to bed.

Last night I couldn’t really decide what to have for dinner because when I went grocery shopping for the week on Saturday, I somehow forgot about Saturday night!  

We scrounged what we had and decided to make breakfast for dinner!  I just love breakfast for dinner and decided on flax and date waffles topped with strawberry-rhubarb yogurt + egg scramble on the side.

I’m getting down to the last of my FlaxMatters Waffle Mix and I am so sad 🙁

This has come in very handy in times like these and they’re so easy to make!  I actually decided that I like the waffle version even better than pancakes.  Besides the directions on the package, I added a hefty sprinkling of cinnamon, 1/3 cup of spiced chunky applesauce from TJ’s and 1/3 cup of chopped khadrawy dates.  OMG dates in waffles are amazing! Every few bites was full of caramel-y goodness.  You must try it!

I also made a mix of non-fat Greek yogurt + homemade strawberry-rhubarb jam for topping.  This was delish!  I always make my jam in the bread machine and it turns out great.  I adore rhubarb this time of year.

This was a great meal!  I also topped the waffles with some extra defrosted frozen strawberries.

This morning I continued the waffle theme with 1/2 waffle with a little peanut butter and cottage cheese mixed with the strawberry-rhubarb jam topped with a handful of Cascadian Farm Cinnamon Crunch cereal, 1 kiwi and 1/2 a naner + 1/3 cup micro’ed egg white.  so good!

Then I went to another killer spin class!  I was hoping to do jump rope and body pump, but found that it was cancelled 🙁 But I’m glad I went to keep my legs a spinnin’. I was dripping by the time it was over.  Afterwards I brought a refreshing shake with Strawberry Jay Robb Whey powder + 1/2 cup non-fat milk + 1/2 cup unsweet chocolate almond milk + 4 slices of frozen naner.

You know I’m not a fan of stevia taste, but I’ve found that unsweet choc almond milk does just the trick to mask that aftertaste, yay!!  I also love the addition of frozen bananas because they act like ice cubes and then when the melt they kind of incorporate into the mix and taste great!  mmm

Afterwards Kristen and I decided to meet up for pedis and lunch, yay!  I love girl days 🙂  Plus my feet were in terrible need of some care since I haven’t had a pedi since I think last summer.

Guess you’d never see my knarly toes on this blog now did you?? 🙂

We grabbed lunch at a place in The District called The Crazy Pita.  I think this is my new fav Mediterranean place!  It was very tasty and I loved the company.  Kristen’s sis decided to join us too 🙂

They have a great selection of plates, salads and wraps.  To start out we shared some Passion Fruit Green Tea.  Have you tried these from The Republic of Tea? omg they are awesome!  Very pricey, but a nice splurge + no kcals 🙂  I added a splash of lemonade to mine (Kristen let me borrow her camera).

We shared some hummus and pita for dipping to start out with.  I had two pitas + about 2 tbsp of hummus.

For my meal, I decided to get the falafel pita wrap, and @ $6.75 it was a pretty good deal.  There is also a whole wheat pita option.  Yum!  It was bursting with spicy, aromatic flavor and I really enjoyed it.  I had about 6 fries too.  I never eat fries unless I go out to eat on occasion, but they sure are salty good 🙂

This morning I prepped some meatloaf in the crock-pot, and I think this will be my preferred method from now on, it looks like it’s going to be good for tonight!  I think I’ll whip up some roasted veggies to go along side too.

  4. I’m so glad you had a nice weekend! Those waffles look so amazing. I don’t ever make waffles, but I should. For our wedding I will ask for a waffle maker….or bread maker! And I need to try some rhubarb apparently?? I think I’ve only had it once in my whole life…..maybe it will be my new favorite fruit!

    LOVE the toes!! I’m embarrassed of mine. They will never show up (again) on my blog!

  7. Both of those waffle dishes look great. I love the kiwi on top. I am so jealous you went to China Ranch. I remember now that you did because I was jealous when you first mentioned the dates. I always wanted to go, but I guess I ran out of time.

    Love your toes! I’m going to get manicures maybe a pedicure with Jeff’s sister wednesday – OMG- we are kinda back together!! Can you believe it… after everything the past six months.. which reminds me how wonderful you were and supportive. Thanks again for being such a wonderful person!
