Persimmon Pistachio Salmon Salad

I tried a Fuyu persimmon for the first time here and I really enjoy them!  It tastes like a subtle creamsicle to me?  I like to put them in chicken lettuce wraps too.

Laughing Cow cheese is also great addition to various recipes to add flavor without added calories.  Or I used it atop of crackers for lunch!

This is my new fave! I found a lonely can of salmon hiding in my pantry and remembered your recipe. Made mine with parsley, and pecans because that’s what I had on hand. Delish!
