Persimmon Pistachio Salmon Salad

I tried a Fuyu persimmon for the first time here and I really enjoy them!  It tastes like a subtle creamsicle to me?  I like to put them in chicken lettuce wraps too.

Laughing Cow cheese is also great addition to various recipes to add flavor without added calories.  Or I used it atop of crackers for lunch!

Persimmon Pistachio Salmon Salad

  • one small can wild salmon with bones (for added calcium!)
  • 1/3-1/2 cup low fat greek yogurt
  • 1 Fuyu persimmon, peeled and chopped
  • 1/4 cup cranberries
  • 1/4 cup chopped pistachios
  • various seasonings (all-purpose, garlic powder, s & p, splash of vinegar)

Mix it all together!  Yum!!

  1. This is my new fave! I found a lonely can of salmon hiding in my pantry and remembered your recipe. Made mine with parsley, and pecans because that’s what I had on hand. Delish!
