bullseye and sloppy joes

Hi guys!  I hope everyone is doing well.  Summer is definitely here in the West and things are warming up!  Today it hit 94 degrees, wow I need to get used to this again.  I went for a ride today and it was hot!  I also can’t believe that some over on the east coast are getting snow.  Craziness.  Things are going pretty good over here at eatingRD, just have been busy!  I have a few simple recipes to share for when you just don’t feel like cookin’  🙂

I received a sample of Nature’s Pride Bread as part of the Foodbuzz Tastemaker’s Program and one night Chris was going to be late from class so I decided to make an easy favorite I like to call a bullseye.  It has many other names like eggs in a basket, toad in the hole, etc.  Have you ever made one?

This bread is very tasty and I enjoyed it!  It has 100kcals and 3g of fiber which is great.  I wouldn’t claim it’s a great source of omega-3s because it has whole flaxseeds, but still some good fiber.

First you start with a slice of bread and a cup that fits the size of your bread.

Cut out a nice little circle.

Warm up your skillet with some olive oil and plop the bread down and break an egg in the middle.

Cook for a few minutes on each side and top with cheese if you like.  I used lite muenster from TJ’s.

I usually eat around the edges and then save some of the lovely yolk for the last bite 🙂

Also had a bowl of yogurt, mixed with Mila chia seeds, puffins, and frozen fruit on the side.

Definitely a super easy meal!

Another recipe I used the Nature’s Pride Bread with was sloppy joes.  Love these!

Instead of a big bun, I plopped some of the sloppy mix on a slice of bread and topped it with muenster cheese.  Had to have some roasted sweet tater fries on the side too.  Yum!

It was a great meal and great for leftovers!

In other news, I’ve been working to graduate this summer and hopefully will get IRB approval soon, yikes!!!  I have to be done by July.  Also working on getting close to the end of my Human Energy Metabolism class which I’ve actually really enjoyed.  Still training at my new consulting job (love!), working at another job, and trying to plan our wedding which is fast approaching!  Holy smokes.  I can’t believe it will be in September!  I also can’t believe how expensive everything is, but I do have my dress and am deciding on bridesmaid’s dresses.  This is one of the dresses and we are working on figuring out the catering.

And still have to fit in that fun girl time 🙂

  1. Ah yes, the bullseye. We made many of those growing up…Chris could back me up on this. The weather finally turned around here in the Sacramento Valley and he have had some nice days of 70-80 degree weather. Las week though, my friend’s cabin up at Tahoe got soooooo much snow, they were having to go into the house through the second story window. They eventually dug a tunnel to the front door though. 🙂 Good luck in the race.

  2. @Allen, haha actually Chris was the one who first introduced me to them!! My grandma used to make me ‘eggs on toast’ never in toast 🙂 We’re having a heat wave here and I’m already roasting and complaining lol wow, crazy snow! Thanks! Actually finished 3rd only because our field was pretty small.

    Ok, to make a very long comment short, I want to try eggs in a basket soon. Nick and I have been really into eggs lately and this would be a nice twist to our boring dipping eggs (not boring as in taste, but just same old same old).

    The sloppy joes sound great too. Lately I’ve been making tempeh sloppy joes at work and they’ve been a surprising HIT with the shoppers!

  5. My grandma (who was also a dietitian) used to make Fireman’s Eggs (what she called them) for us as kids. Great childhood memory! I need to make them for my kiddos! 🙂

    IRB= headache. I advise nutrition research every year for our interns and am always nervous about IRB. 🙂

  9. Your yogurt bowl looks so delicious! And who can say no to sweet potato fries! Everything in this post looks great. Also, I had to mention that when I was growing up my parents had those same round plates! I think they still have them. Brought me back to some good family dinner time memories!
