on the mend + menu plan monday

Hey all!  Boy it seems like I’ve been feeling crummy for way too long and it has been so uncharacteristic of me.  Usually I’m over colds fairly quick and somewhat back to normal, but this bronchitis really threw me under the bus and then ran me over a few more times for good measure.  I was over the actual infection for awhile, but learned my immune system was going into over drive and not letting me stop coughing or breath for that matter.  I have never had asthma my whole life, but find myself wheezing with a tight chest, which causes me to cough.  I can’t tell you the sheer joy I felt yesterday morning when, after 12 days, I had only woken up once during the night to cough and without help from codeine!  Never underestimate being able to take a deep breath of fresh air.  I’m still having a difficult time breathing easy, but hopefully it is on the mend.

Yesterday, I had a great time with a few of my bridesmaids trying on dresses and I actually put some moola down on my dress!  yay! kinda crazy.  I’m looking forward to getting my size and not having to clip and push and hold up 🙂  Still debating on the bridesmaid dresses to see what will go best, but I’m thinking of a latte/taupe color to go with my ivory dress.

We had a great time trying on different dresses and then afterwards we headed over to a place called Settebello which has some amazing pizza.  Their dough is just chewy, doughy, crunchy perfection.

We started out with the Insalata Grande.

We shared the Settebello Pizza and a Quattro Formaggio.  Yum!

And then I proceeded to have 2 more slices!  wow this pizza is good and my appetite was back in action!

Then we headed over to Josie’s for some good ol’ frozen yogurt.  I seem to always have an appetite for that 🙂

It had a really cute interior.

I got vanilla, peanut butter cup and a dollop of strawberry.  I love Snickers on my frozen yogurt!  I also added a few strawberries and some Reese’s.

We had such a blast talking about wedding stuff and enjoying each other’s company!  I love my friends!

Meal Plan Monday

This week I wanted to throw in some tasty casseroles to stretch those meals as far as I can.  I think casseroles are my fav for that reason.  Even though this is called Meal Plan Monday I usually seem to start on Sunday because that’s when I can get cooking for the week.

Sunday: Creamy Spinach and Mushroom Lasagna (this one’s a keeper, it was great!)

Monday: Cornbread topped Pot Pie (going to make with white beans instead of chicken)

Tuesday: Leftover Buffet

Wednesday: Crockpot Chili Chicken Tacos (always a family favorite)

Thursday: Leftover Buffet

Friday: Fajita Friday with friends 🙂

I was actually able to make it to body pump yesterday without having too much trouble!  Not being able to go to the gym or cycle for the past 2 weeks has gotten me stir crazy.  I don’t think I’ve ever gone that long!  Hopefully I can get in some riding this week without having an asthma attack because I just bought my USA Cycling racing license and the season is starting!

  1. Yep, a couple years ago I had bronchitis and it was the worst – I didn’t actually feel bad, but that unsatisfying cough was awful! Glad you are getting better!

    OMG, I want that pizza – it looks like the perfect crust. I hope to someday have an outdoor pizza oven! 😀

  5. Glad you are finally feeling better after that nasty illness. I know this time of year can be rather challenging on the immune system. That pizza looks so tasty! yum! And Josie’s fro yo is adorable inside. Thanks for sharing!

  6. Sorry to hear that you’re still sick. I got bronchitis last year in Prague. Pushing through the icky feeling and trying to enjoy vacation just made it worse.

    On a happy note, wedding planning sounds like a ball! What a great way to enjoy the girlfriends. Can’t wait to see dress photos. 🙂

  9. Yay, so glad you’re feeling better! Sounds like you’ve finally got this cold beat! I think frozen yogurt speeds up the process 😉

    Your meal plan looks easy and delicious! I’ve been thinking about experimenting with easy recipes with prep-ahead ingredients, so I’ll have to check yours out 🙂

  12. Glad you are starting to feel a little better. I would assume you have been to the doctor. Looks like a fun time out. I already drooled about this food on Kristen’s blog, but I will drool again with yours. I wondered if you guys had tried my old bosses place (I assume she still owns it), Neilson’s frozen custard in Henderson. Just curious. Feel better!

    Your pizza looks really good! I just ate Chicago pizza this week, and it was delish.
