weekend of friends

Whew, where has the time gone?  I apologize for being MIA lately, but life has come along and shifted my time away from the blog.  It’s sure is tough fitting it all in as you guys all know, but I’m hanging in there and doing my best to maintain this little corner of the blogosphere that I enjoy so much.  I know that posting regularly is the best for readership, but it just doesn’t quite work that way for me now =/ and sometimes there is nothing like a weekend full of good times and good friends.  

Since Viva Bike Vegas, I’ve gotten in some recovery and have continued to ride.  Most of my energy has been trying to get my thesis lit review and proposal squared away.  It’s going to be a tight fit, but if all goes well I should be a masters graduate in May!

Last weekend our good friends got married, yay!

I keep dreaming about this cake it was so good!

Chris and I are still planning our wedding waaaaay down the road and have starting checking out venues and putting our guest list together.  Boy, it is overwhelming!

Fajita Friday

Most Fridays Chris and I meet up with some cycling friends at a local Mexican restaurant called Carlito’s Burritos for Fajita Friday.  It’s always good times and the food is awesome.  You can’t beat $5 chicken fajitas!

It’s a pretty small place and it gets crowded on Fridays, but it’s totally worth it.

First you order at the front and then try to find a seat if you’re lucky.  They don’t have a number system in place, but no matter how many people are there or how crowded it gets, they always somehow get our orders right every time!  I usually always order the chicken fajitas because they are delicioso.  They also have mondo burritos that look great (hence the name ‘carlitos burritos’).

They even fit a mariachi band in there on Friday which is nice and authentic and all, but sometimes they are so darn loud you can’t hear the person next to you! whatcha say???

Chris likes to also get the green chili quesadilla and boy let me tell you those chilis are HOT!!! but oh so good in a burn your mouth on fire kind of way.

Most of the time there is so much food, table space is limited and great conversation ensues into the night 🙂

PumpkinMan & Wine Party Saturday

The PumpkinMan Triathlon was this past Saturday so we decided to go on a bike ride and then root on some of our friends in the event.  I just love these events and it’s so fun to cheer people on!

Total the ride was about 40 miles.  The first 26 or so was a tour de Boulder City which includes a neighborhood section called ‘Little Italy’.  Let’s just say there were a few hills that kicked my booty and I need to go back to master.  Also my bike positioning is still off and I need to figure out that asap before my knee gets worse.

It was a lot of fun and I’m getting the itch to try a tri next year!  We’ll see about that one.

And I found an interesting way to store a banana on the bike.

After the ride, Chris and I headed home and relaxed a bit before our friend’s wine tasting party! I was so excited since I haven’t had wine in awhile, but I knew I shouldn’t go overboard.

Our host had also just completed the Olympic tri and I couldn’t believe she could drink wine after that!

It was a great party and we had an absolute blast!!!!  Most of our cycling friends were there and it was fun to chat it up outside of the world of spandex and helmets 🙂

um, there were only 17 bottles for tasting.  Not sure if there would be enough.

and lots of tasty apps and cheese for munching.

These sesame cookies were tasty!  Not too sweet with a nice, nutty crunch.

Pumpkin cheesecake!

My favorite wine of the night had to be this sangiovese.  It was fruit forward, but still had a nice, luscious finish.  I had about 3 smallish glasses, but I knew when my body said you better stop now! Then I had 3 large glasses of water.

Let’s just say there was some drinking going on because all 17 bottles got polished!

It was so much fun with lots of laughter.  There were points I was laughing so hard my stomach hurt! ha!

Brunch Sunday

Our good friends had invited us over for some brunch and it was great to catch up.  We also found out the good news that they are actually 6 weeks pregnant!!! Very exciting 🙂

The food was delish and we started with berry parfaits with balsamic infused whipped cream.  Heaven.

We sat outside because the weather was gorgeous and slightly overcast.

Next up was a spinach and mushroom quiche that was out of this world!  I had to have 1.5 pieces.

After brunch we took our doggies to the park for some romping in the grass.  They had a blast!

There is just nothing like friends.  What a great weekend!

  1. That place sounds so fun! I wish Nick and I had a core group of friends with whom we always did stuff on the weekends. We have his friends, and then my friends, but they never combine forces. They are so different.

    The wine tasting sounds fun. It’s been such a long time since I’ve been to a good wine tasting (summer, I guess). It’s a great idea to through a wine tasting party out of your home. I think we’ll have to do that sometime!

  4. Sounds like a great weekend. I LOVE your photography skills. I just started a blog and took a pitcure of dinner last night for it and it looks like dog food!! 🙂 I guess practice makes perfect (or least better!).

  5. Completely sympathize with blogging and time thing! It’s really hard, and a busy schedule is usually what prevents me from blogging, too. I hope things are going well with your thesis, though!

  7. Oh! So much to comment on! a) gorgeous wedding cake! b) love the banana! c) pumpkin! d) I heart quiche!

    I feel your pain on the blogging thing… some days, I’m pretty sure I’m barely holding it all together (and I don’t have much of an in-person social life in the place that I work…), and having to prioritise can mean choosing sleep over blogging, for example. But I’ll always read you, even if you disappear for awhile! Welcome back!

  9. I am fairly certain Ryan did the Pumpkinman one year, I think it was just before I met him. He did a few tris. I however do not run, so that will not really happen for me. Looks like your friends had a beautiful wedding. I have never heard of Carlitos, so either it is new, or way way way out in Henderson.

  12. You and Kristen both have me craving Mexican food today! Glad that’s going to be lunch today! The wedding was stunning…I love the italian lights! And that cake…yeaaah 🙂

    I love mariachi bands, too. The Mexican place I grew up going to always had them on weekday nights, so that’s when we went. My parents would always request Spanish Eyes, get up, and dance. It used to embarrass me and now I think it’s adorable 🙂

    I am getting the itch to do a tri. too. Sometime! Time becomes even more sparce with training, so the timing has to be right. But when the time comes, I want to strap my banana in like yours…I love that!!!

    That quiche looks delish. I have never tried making one but I think I need to give it a try.
