funky quinoa & walnut chicken

I saw a box of red quinoa at TJ’s the other day and had to give it a try!  Isn’t TJ’s just the bomb?  I’m so glad we have one fairly close to us. I always seem to find something new to try.  Well, that’s how I am at most grocery stores, go in for one or two things and come out like a kid in a candy store.  Chris says I am no longer allowed in Whole Foods, ha! I also made my usual walnut crusted chicken with the quinoa dish, but added another ingredient for some extra crunch and texture.  You’ll see!   (more…)

Buitoni Pasta Party

Wazzz up my readers?! Don’t worry I haven’t gone loopy on you, well almost, but I did have the wonderful opportunity to see the one and only Snoop Dogg on Sunday night/Monday morning!  It was at the night club Rain in the Palms Hotel.  It was a private party for the group at pokerstars.net, which I have no affiliation with, but a good friend offered me a ticket and I was like . . . heck yes!

Now many of you may be quite confused . . . Kristen? A Snoop fan?  That sweet, white girl likes rap and hip hop?  Well, actually I do! Many of you may not know that I love to get my groove on since I’ve been a dancer for most of my life and on dance teams in high school and college.  While my predominatly ectomorphic body type really was best for ballet, I sure like to busta move on the dance floor with some good ol’ hip hop.  Probably one of my other favorite artists of this genre is Ludacris.  I’m not going to lie, I was struggling on Monday morning, but let’s recap a great evening, shall we? . . .   (more…)

I sent my lens off to Canon last week and hopefully they will be able to send me a new one ASAP.  I am sure missing it something fierce.  I have an ancient piece of crap to work with and I’m trying to make the best of it.  I hope you don’t mind 🙂  I have a great roasted pork loin with POM reduction recipe, along with a new twist on grilled pizza, and my first attempt at making coffee!   (more…)

BBQ Salmon Burgers

I’ve been wanting to include more fresh fish in my diet, but it can be a challenge when it can be pretty darn expensive and many varieties are farmed, have color added, or aren’t eco-friendly.  I would love to live near water where there is easier and cheaper access for fresh fish.  Most of my staples include wild canned salmon and canned sardines, but there is just nothing like fresh.  Since I don’t generally eat too much fresh fish, I will on occasion get farmed and probably PCB-ridden fish, but as with all things, moderation is key.  I believe the benefits of moderate fish intake far outweighs the risks from contamination.  Keep reading for a tasty BBQ Salmon Burger recipe!   (more…)

I just love three day weekends!  With that one extra day it feels like so much more can be accomplished, in addition to some much needed relaxation.  I’m so thankful I was able to have it off.  I sure hope you guys had a nice fourth of July no matter what you were up to, working or otherwise.  There was much to celebrate and be thankful for with great food, fun times with friends, and our country’s independence . . .   (more…)
