balsamic tempeh tortellini + a giveaway!

CSN Stores graciously offered to giveaway a $60 giftcard to my lovely readers to use at any of their online stores!  They have a ton of home and kitchen goodies, from furniture, cooking gadgets, even neat lighting.  I’d love to get some of their landscape lighting in our backyard that’s currently all rocks right now 🙂  Check out the giveaway details below!  

I managed to make it for 5am spin yesterday for a second early morning in a row.  woop!  I felt pretty strong in class actually, and didn’t want to stop when it was time to cool down.  Usually I get a bit sluggish at work after an early morning workout, but I even had the thought of going to body pump after work . . . nah, I just went to Whole Foods instead to pick up a few random things like chia seeds, Luna Bars, kale and Wallaby yogurt.

I had a few options for dinner, but wanted to keep it fairly simple and quick.  I had some tofu and tempeh leftover from the BBQ ‘chicken’ salad, some pesto tortellini from TJ’s, pizza sauce, local tomatoes, and summer squash so I thought I’ve got to make some kind of pasta dish.  Although I really just wanted to jump in the freezer and suck on ice for dinner I’ve been so freakin’ hot lately, temperature I mean of course 😉

For the tofu and tempeh, I cut about a cup in bite size pieces and sautéed it in a bit of olive oil, adding some garlic powder and AP seasoning.  Once it was golden, I added about 1/4 cup of balsamic to the pan and let it reduce down and coat the tempeh.  I think this is my new favorite way to cook tempeh!  It’s really a blank canvas as far as flavors go and balsamic just gives it a nice, sweet zing. Then I sautéed about 1 cup of summer squash until slightly brown adding some more seasoning.  While this was going on I cooked up the package of fresh tortellini and tossed them with about 1/2 cup of pizza sauce + 2 chopped local maters.

I made a nice salad on the side and everything was ready!

The addition of balsamic to the tempeh really gave it a nice flavor, although I don’t think Chris is really sold on tempeh lol but he ate it anyway.

mmm fresh raspberries are my fav lately, nothing like ’em.

I’ve actually been on an early morning riding streak this week.  Chris and I made it for another quick ride this morning.  We actually contemplated about going at first, wanting to savor a little extra sleep, but I figured I was up already, why not?  We didn’t roll out of bed until 4:30am and had to cut the ride a little short.  It was still nice to get in the saddle for 12 miles before work 🙂

  4. Balsamic tempeh sounds awesome! And I agree, raspberries are the best. I love how colorful they are too! Oh and I am definitely a morning person when it comes to working out 🙂

  22. GREAT looking dinner Kristen!! Even if it has tofu in it 🙂 hehe, I would just stick to tempeh.

    As for the giveaway, this is fabulous. We are looking for a light fixture to go above our dining room table. I went to the website and there are so many, I would need Nick to make my final decision 🙂 I Tweeted it for you!

I will have to try balsamic tempeh, it looks really good….or you guys could come visit again. 🙂 Hope you got to veg out on Sunday, it was hot here, hit 100, and today it is supposed to be 104…bleh. I don’t know how I ever managed to survive Vegas in the summer with no AC in my car?! But we are supposed to be back down in the 80’s by Thursday / Friday.

    I don’t remember my Twitter account info, so I can’t Tweet ya there (does the thought count?), and we haven’t updated our family blog for a while, so I will have to go with which lights I like. 🙂 I actually really like the hanging Japanese light look for everything: yard lights, porch lights…sigh…darn money gets in the way of redecorating!
