ahhh friday

Happy Good Friday!  Nothing too stellar to report here, but boy I’m glad it’s Friday.  With being out of town for the SCAN Symposium and going right back to work, it’s hard to catch back up.  I’ll survive, but it will be nice to get some wash, errands and cleaning done this weekend hopefully 🙂

After work I finally got the chance to go grocery shopping, yessss!  Chris was complaining there was nothing to eat and I was searching through the freezer and cupboards trying to scrounge up something for us the last few days.  Pizza was definitely not on the menu as Chris ordered 2 giant pizzas that he ate off of the entire time I was gone!  hehe ah men, they can’t live without us, eh?  Nah, Chris is a pretty good cook, just working a lot and going to school 😉  

Last night I went to body pump for the first time in a week and a half and I am soooooo sore today! ugh, take a little time off and my muscles go into rebellion.  I also haven’t had a good ride since the 50 miler and I’m not sure if my legs or the wind are going to cooperate this weekend.  We shall see . . . I did a quick 30 minutes on the trainer this morning to try and loosen the legs, but they are not liking me at the moment.  I’m still contemplating the new bike situation and will give it another several weeks or so to make a decision 🙂

Dinner was Pesto Pasta! mmm nothing says spring to me like a big bowl of pasta, smothered in vibrant pesto and farmer’s market roasted maters.  I’ve made this a few times before, one time with a lemony tofu mixture which was equally tasty.  Pesto is really pretty easy to make, very versatile and adds a lot of flavor to just about anything like crock-pot pesto chicken and sammies.

Here are the approximates for tonight’s mix:

  • 3 oz fresh basil (about 3/4 of a TJ’s container)
  • 1/4-1/3 cup roasted pine nuts
  • 1/3-1/2 cup parmesan
  • 3 garlic cloves
  • 1 laughing cow garlic and herb
  • splash of white balsamic vinegar or lemon
  • few good glugs of olive oil
  • salt and pepper
  • 1 pint cherry tomatoes
  • 8 oz brown rice pasta, cooked

Process all the ingredients except the maters and pasta in a food processor.

These were the best tomatoes I think I’ve tasted in awhile!  They were super sweet, yet slightly acidic and burst with vibrant flavor in my mouth.  Most tomatoes taste like bland, mushy crap, so these were a nice change.

I like to sauté the maters in a pan until slightly charred and then cut them in half.

Mix everything together and top with more cheese!

Then I broiled it for a few minutes to get a nice, crunchy ooey gooey top 🙂

I couldn’t resist the avocado pie my fellow colleague made for dessert.  It was delish!  I’m going to be tweaking the recipe maybe for a dairy-free option?

Well, I think Chris and I are going to lounge on the couch and watch some DVR’ed It’s Always Sunny episodes.  Anyone else like this show?  I think it’s hilarious, crude yes, but funny none the less!  Have a great weekend 🙂

  4. ohh I love when its spring and the berries start coming out. and then the fresh tomatoes. yum. I can’t eat a hothouse tomato, gotta go for the real ones when the weather gets warm.

  6. Jacob and I love It’s always sunny! It’s our second favorite show after How I met your mother.

    Pesto is one of my ultimate comfort foods. I try to keep individual servings in the freezer so that when I want it all I’ve got to do is defrost and voila, tasty pasta or sammy!

  8. That pesto looks fantastic. Wow, I want it now! Oddly I’m not a huge pasta fan, and neither is Nick. We are both Italian but don’t like pasta….weird. Pesto on pasta always makes it look so good though, and I would eat pasta if it had a good pesto on top. I guess we would both prefer the Chris method of buying (or making…) a pizza!! Nick is the same way, while he knows how to cook, if I’m gone he will just order in 🙂 Men!

  10. Oh yum pesto pasta! My favorite spring food is peaches, strawberries and fresh greens. All of the things that I cant get in the winter time. HAPPY EASTER 🙂

  14. Avocado pie? Sounds interesting and like something I’d love. I am digging the green foods…pesto and avocado pie. You just needed a green monster to complete the scheme 🙂 Vegas was WINDY this weekend, yep…I hope it calms down so you can ride!

    Spring foods? I’m loving the peas 🙂 I got some English Peas the other day that were just stunning!

  16. I love your green foods! I’ve never had avocado pie, but it totally sounds like something I’d like to try.

    I also love pesto. I made it for the first time a few weeks ago, and I was shocked at how easy it was!
