stuffed chicken + cute doggy

This dish sure hit the spot Friday night, and it may look challenging, but it’s really not too bad.  I also had some local purple carrots and baby parsnips that needed to be cooked, as well as some cauliflower and fingerling potatoes.  I love dishes like this 🙂  There are also some more cute doggie pictures ahead!   

Stuffed Chicken & Roasted Veggies

Serves 4

Ingredients

  • 1/3 cup onion, diced
  • 1/4 cup green bell pepper, diced
  • 1  chicken sausage link
  • 1  garlic clove, minced
  • 1/4  cup chicken broth
  • 1 /8 cup panko bread crumbs
  • 1/8 cup parmesan
  • 1/4  teaspoon  freshly ground black pepper
  • 2  (6-ounce) skinless, boneless chicken breast halves
  • olive oil
  • 1/2  cup  fat-free, less-sodium chicken broth
  • sauce & veggie recipes to follow

Directions

Remove casing from sausage; crumble sausage. Heat a large nonstick skillet over medium-high heat. Add sausage, onion, bell pepper; sauté 5 minutes or until sausage is browned and onion is golden. Add garlic, then 1/4 cup broth to pan; cook 1 minute or until most of liquid is absorbed.

Turn off heat, stir in bread crumbs, parmesan and pepper. Let stand 5 minutes or until liquid is absorbed; toss to combine.

I like to use panko for breading too 🙂

Place each chicken breast half between 2 sheets of plastic wrap; pound to 1/4-inch thickness using a meat mallet or rolling pin (I butterflied mine first since they were large). Place half of stuffing on one side of each chicken breast half, leaving a 1-inch border around sides. Fold remaining half of each chicken breast over stuffing, and secure with toothpicks. Sprinkle chicken with salt and pepper.

Heat a large skillet over medium-high heat. Coat lightly with olive oil. Add stuffed chicken breast halves to pan; cook until golden on each side.

Add chicken broth, scraping pan to loosen browned bits. Cover, reduce heat, and simmer until chicken is done (about 155 F then take out of pan, cover with foil and carryover cook to 160-165 F).  These larger breasts took about 25 minutes. Remove the wooden picks before eating and serve along side some roasted veggies.

To make a sauce:  There will be some great juices still in the pan, so I added about 1/2 tbsp butter, 2 tbsp balsamic vinegar, 1/4 cup LS broth mixed with 1 tbsp flour, garlic powder, pepper and about 1/2 cup LS chicken broth to make the sauce.

For the veggies:  I tossed them with olive oil, salt, pepper, garlic powder and roasted at 375 F for about 35-40 min and added some shredded parmesan near the end.  Yum!

We really enjoyed this meal!  I think it would also pair really well with a balanced white wine like a sauvignon blanc.

After dinner we were craving some mint fro yo since they only ever seem to have it in March (stupid), but Golden Spoon didn’t have mint!!!!!  Blasphemy!  I got a mini of peanut butter + raspberry cheesecake instead.

Remember when I said that we may be adding a new basset to our family?  Well, we went and met Emma this morning and she is sooooo adorable!  and actually really well mannered for a 6-month old puppy.  But we are in contemplation as to if we can really afford her right now.  It’s just tough, plus Buster doesn’t seem all that interested with her and doesn’t want to play and keep her occupied 🙁  Chris and I both are working, going to school and have a lot of things going on and puppies take quite a bit of time and money.  We’re also not sure where we will keep her for 10 days when we go to Napa for the LiveStrong ride.  Boarding is sure pricey!  She is just such a sweetheart though.  We are going to see if it will work this week.  Hi Emma!

awwwwwwww!  Isn’t she just a doll?!  omg cuteness overload for sure!

Happy Saturday to you all!  I’ve been trying to study and get some house stuff done while chasing around Emma just to be sure she doesn’t get into any mischief!  She seems to like bringing in sticks from the back yard and doesn’t want anything to do with her nice chewy bone 🙂

  2. Oh my, that chicken looks AWESOME. I’m definitely making this for dinner this week. I’m not looking forward to all the boarding I have to do with our beagle too – Think it’s like 15 or so days spread out over the year. We do it at our vet but it’s still very expensive, and not being able to pick him up on Sunday stinks 🙁

    Boarding is so pricey hey? We are going away for 3 weeks, and the dog boarding is the same price as our plane ticket! EEK!!

  6. Awww, Emma is adorable!! I’ll admit, I’m not a fan of basset hounds, because when I was a kid we had a lady with 3 of them who lived behind us. They barked ALL DAY EVERYDAY. And they were loud and annoying, and the lady would come outside and scream at the dogs to “SHUT UP”! at least 5 times a day (she was crazy). So I always think about her when I see them. BUT, I still think they are adorable, and I hope it works out with her this week!!

  15. Awww what a cutie. Her paws are so big! I love that about pups when their paws and ears look oversized as they grown into their normal size. Dinner looks amazing per usual! I’ve never seen purple carrots in the grocery store… maybe when the farmers market opens up I’ll be able to get my hands on them.

    Emma is adorable and I understand completely about dogs and time/money — Lily is so time-consuming and spendy!!! Worth it, but I don’t know that we could have another right now! But that face…I would have a hard time saying no to Emma 🙂
