Many thanks to all your wonderfully kind words and thoughts about Buster.  We really appreciate it.  We were pretty much a mess this past week, but with time it is getting easier.  I don’t think there can be anything that can replace our happy guy, but we have to just remember all the good times we had for sure.  I have gotten a little back logged on recipes, but I do have one of my favorite cabbage recipes for you!

what to do with an eggplant

To be honest I’m usually not a big fan of eggplant.  Sometimes when I get it in restaurants thinking I want to try it again, it’s overly chewy and unpleasant.  I haven’t worked with it at home because I don’t really know what to do with the darn thing!  When we received one all wrapped up sitting nice and pretty in our Bountiful Basket pick-up I wondered … now what the heck am I going to make with this thing?  I am very open to trying all kinds of different foods and actually found a recipe that suites eggplant very well.  In fact, I think it has renewed my confidence in this purple beauty.   (more…)

summer ‘cookin’

The summer this year has been very mild in comparison to years past where temperatures would surely reach the one hundred and fifteens or higher by July and August.  This morning I actually got up for an early ride the the temp at 5am was near 75 F!  That is unheard of really.  It of course has still been pretty darn hot though and turning on the oven is only done as a last resort if you want to get roasty toasty.  I made some tasty recipes this past weekend that are nice and refreshing for summer…   (more…)

Happy 4th of July!  It’s been a great weekend so far and I just love the extra day.  I hope you are all having a nice holiday if you get the time off.  Chris and I have been watching the Tour de France and it was great to see an American win today’s stage 🙂 Go Farrar!  I had my own little crash boom bang this weekend and I don’t mean fireworks! . . .   (more…)

plum good

I have to say I was disappointed with the lack of strawberries and cherries this year at TJ’s.  I remember last year we had weeks and weeks of luscious, sweet strawberries in season piled high as you walked in the sliding doors, but this year has not been so good.  This past week I did see a nice carton of plums labeled with ‘sweet and juicy’, so I thought I would give them a try and incorporate them into a savory dish . . .

salmon patties

Happy Friday!  This week has surely flown by and I’m looking forward to the longer weekend ahead 🙂  I have a yummy recipe utilizing canned salmon from Pure Alaska Salmon (I received a sample to review).  Most of the time I’m not able to buy fresh fish, besides for a special treat, so I usually always have canned around.  It is recommended to get at least 2 servings of fish each week and the canned variety can be a great way to get all the health benefits of fish without the heftier price tag.   (more…)

I tried a new recipe recently instead of trying to save every last ounce of time with tried and true favorites.  Yay!  I have to say that I unfortunately haven’t been in the kitchen as much as I used to and it stinks.  Chris and I have made a pact that once school is over and done with (hopefully soon before my head starts turning in circles), we are going to get back in the kitchen together more often.  It’s just been really tough lately.  Here is a tasty and pretty easy recipe that we both loved!   (more…)

Hi guys!  I hope everyone is doing well.  Summer is definitely here in the West and things are warming up!  Today it hit 94 degrees, wow I need to get used to this again.  I went for a ride today and it was hot!  I also can’t believe that some over on the east coast are getting snow.  Craziness.  Things are going pretty good over here at eatingRD, just have been busy!  I have a few simple recipes to share for when you just don’t feel like cookin’  🙂 (more…)

creamy mushroom and spinach lasagna

Hello Friends!  How is your week going so far?  I’m definitely not 100% quite yet, but boy I’m feeling better!  I actually slept through the night without waking up once and made it to spin this morning after 2.5 weeks of blah.  I kept it super moderate, and while my chest was a little tight, I felt ok.  Hallelujah!!!!

It’s casserole time!  These are great because they make a butt-load of food and are comforting, yet can also be packed with nutrition.  We aren’t having the nasty snow storms and crazy weather like the east coast is having (yikes!) but it has been actually pretty chilly here for us weather wimps out in the west! 🙂  This is perfect for the chilly weather. When I first heard, I mean saw, this idea from Ann over at Dunaway Dietetics and Organizing Junkie, I thought it was such a good idea to showcase meal plans for the week!  I’m already a meal planning fool, so I might as well share, right?  Menu planning can be such a pain, but with a little bit of extra dedicated time to sit down analyze what’s left in the pantry, what your family is craving, and your schedule allowance for the week, it can be a snap!   (more…)
