I’m really not fond of the word ‘meat substitute’ because ‘substitute’ conjurs up the meaning of inadequate or not quite as good as the real deal.  I like to think of lentils as a plant-based protein superstar; definitely not a substitute or alternative.  Heck I even like these better and they are packed with fiber.  These lentil ‘meat’ balls are sure to win you over.  (more…)

meal planning 101

Many times I hear that meal planning and cooking at home is difficult because it requires too much time. I believe it is all relative to the amount of time we choose to dedicate to the task at hand and the value we place on those tasks.  Chris and I have been exploring ways to find more time and it’s amazing how our subconscious choices influence what we think is a lack of time or lack of money.  It’s really all about choices and adapting.  Here is how I plan meals for the week… (more…)

Happy belated new year!  Chris and I were pretty low key again this year and fell asleep before the clock struck midnight.  Pretty fun and crazy, eh?  We also had a great Christmas Eve dinner with family and everything on the menu turned out really well.  Everyone actually enjoyed the mostly-plant based menu. Prepping for two days straight really paid off 🙂  It’s been pretty chilly around here so I’ve been making lots of different comforting soups.   (more…)

healthier holiday gift guide

Christmas is just around the corner and I am procrastinating as usual with all the usual tasks that need to be completed.  I swear next year I am putting a reminder on my calendar to start this stuff in November, ha!  We actually do have some decorations up this year.

I still have some cards to address and gifts to send, but hopefully I will get a majority of it finished this weekend.  Have you completed all the items on your holiday list this year yet?  In case you are still scrambling for some gift ideas, here are just a few healthier options that are sure to please those foodies and health nuts on your list.

Hey there!  Anybody home???  It’s been quite awhile since I’ve posted here on eatingRD and I’m not sure if anyone is out there still.  Any who…I wanted to share a little update with you as to what I’ve been up to.  A few weeks ago Chris fractured is elbow so I’ve been taking care of him and the extra things that he can’t manage with only one arm 🙂  It’s amazing how much we rely on our limbs for so many things!   (more…)

wine baby

Hi there!  How is everyone?  My friend and I recently visited a local business called U Bottle It where you can make your own beer and wine.  Chris gets all of his beer-making materials and food stuffs here and I thought it would be fun to try this for my friend’s birthday.  I’m not drinking alcohol too much these days but I thought it could be an awesome Christmas gift for 2013 once it ages a bit 🙂  Take that procrastination!

My friend is a lover of wine and it will be really neat to see how wine is actually made in the wineries (on a much smaller scale of course).  The wine kit makes a whopping 30 bottles, which ends up being about $6 per bottle.

pumpkin breakfast porridge

It’s that time of year again!  The weather is getting chilly, fall is in the air and pumpkin everything is sprouting up everywhere.  This is my favorite time of year when I can open up the windows and get some fresh air and not be blazing hot.  It’s been super nice here in the low to mid 80s and not windy.  It’s perfect for being outside 🙂  I love pretty much all varieties of winter squash, don’t you?  (more…)

The weather here in Vegas has been gorgeous in the mornings lately, where it’s been in the mid-70s and practically no wind.  I just love this time of year.  It’s still a little too warm during the day, but the mornings and evenings are about perfect.  Really makes me want a big patio to lounge out on!  It even gets me in the mood for riding my bike again… (more…)

new favorite veggie patty

In the past, I haven’t had much luck with veggie patties.  Either they fall apart when I try to cook them or the texture is off.  Chris usually doesn’t like the texture of wanna-be ‘meat’ patties and prefers that we make portabella mushrooms instead.  Well I think I found a keeper with this recipe.  The texture is just about right and they stay together really well.  Yippee!  It’s also packed with fiber and plant-based protein which is an added bonus.  (more…)

brand new basket + first batch of kombucha

Chris and I found a great new kind of bountiful basket.  The kind where the farm is actually closer to home and you can speak with the business owner that actually owns the farm.  The kind that you can request certain produce you like more than others to customize your basket.  I didn’t really think this kind of community supported agriculture (CSA) was really available in Vegas!  There are a few CSAs in Vegas, but this one seems awesome.  I also finally found a SCOBY and brewed up my first batch of kombucha!  (more…)
