Welcome to eatingRD!

My name is Kristen and I am a Registered Dietitian with a great passion for culinary adventures, trying new recipes, food photography, fitness and sports nutrition.  I started this blog in December 2008 with the initial idea from family and friends as a way to remember and share my favorite recipes.  Since that initial post I have fallen in love with blogging and this inspirational blogging community (that’s you!).  It’s wonderful and I wish I could spend all my time blogging and visiting!

I am continuing my education towards a Masters in Exercise Physiology with an emphasis in Sports Nutrition.  It’s truly amazing how what we eat can greatly impact our performance.  My thesis will focus on the use of probiotics in athletes, looking to see if they can shorten the duration of URTIs/sick days in a winter sport.

I work at the University of Nevada Cooperative Extension with the “Calcium, It’s Not Just Milk” Program which teaches 8th grade health students the importance of calcium for their future bone health and overall wellness.  I assist with curriculum development and program promotion.  Once I graduate I would like to pursue something related to sports and/or culinary nutrition (would love to go to culinary school), but I’m still trying to figure out exactly what I want to be when I grow up!

I have always had a great love for fitness and being active!  I started in the wonderful world of dance when I was 8 years old, and studied many styles including ballet, jazz, hip hop, tap, and modern.  By far my favorites were ballet, jazz and hip hop.  I love dance because it is an outlet for me to express and let loose!  I was also on dance team all throughout high school and college, which was such a great experience.  While I don’t dance quite as much as I used to, I still take an occasional hip hop or jazz class now and then.  I sure miss it!

I met my fiance Chris during my senior year of college and we’ve been together for almost 4 years in September!  I can’t believe it, but it has been wonderful because he is like my best friend.  We both enjoy cooking together, traveling, being active and trying wine!  We recently bought a townhouse and are enjoying all the joys of homeownership!  Since we are both going to grad school at the moment, and still trying to save up while paying the mortgage, wedding plans have been put on the back burner for now 🙂  Here’s a picture at one of our favorite restaurants Casa di Amore . . .

Much of my weekly ‘heart-pumpin’ fitness sessions include various gym classes like body pump (weights), kick box and spin.  I’ve also recently started running and cycling with Chris and we are having a blast!  We are members of a cycling group here in town and it’s fun to meet new people who also have a passion for staying active.  In the future I would like to start swimming and train for a sprint triathlon.

    Your thesis sounds really interesting – too bad I don’t do a winter sport. If you ever need a guinea pig for gymnastics, you know who to ask! 😉 I have found that probiotics have really helped me.

  5. kalli, yes! omg I love and miss Reno very much! I went there for unergrad. It’s a great ‘little’ city 🙂 I would love to go back there if the job market was better.

  9. Go Portland, OR! Represent!

    I just recently came across your blog and i really enjoy reading it!

    I have been on the fence between my current major and a program in nutrition, so that i could become an RD. How did you do it? I’ve heard that you have to have an undergraduate in dietetics, but i only know of one school in my state that offers it, and i can’t afford to go there…did you do dietetics specifically?

  10. Hanna, Hi! Getting your undergrad in nutrition (dietetics) by an accredited institution is the way to go to become an RD. There may be other science-based avenues depending on the institution. I would definitely talk with your advisor or someone in the nutrition dept to see what would be best 🙂 Thanks for stopping by my little corner of the blogosphere, good luck!

  18. I love your blog…we are so similar!

    I am currently working on getting my B.S. in Dietetics then I will go on to do my internship and then of course become an R.D.
    My main focus is on the culinary side of things and I almost majored in Sports Nutrition! I went to culinary school before beginning my journey into Dietetics 🙂

    I will definitely be back to your blog, it is wonderful!
