Spring is definitely here! It’s such a nice time of year and I love all the new, colorful produce that will be in season. Spring is great for fresh salads and lighter fare and this one fits the bill well. Sweet strawberries in season are my fav! There is nothing like fresh mint to really give a recipe some fresh zing.
Strawberry Asparagus Salad with Lemon Mint Vinaigrette

Ingredients (4 – 6 servings)
For the salad:
- One medium head of romaine lettuce, chopped (feel free to use any fresh lettuce variety you have on hand, spinach, butterhead, etc)
- 1 bunch of asparagus, chopped (remove tough ends)
- ½ pound strawberries, cored and chopped
- 1 avocado, sliced
- ¾ cup walnuts, chopped
- 1 tbsp maple syrup
- Pinch of sea salt
For the dressing:
- ¼ cup fresh lemon juice (about 2-3 lemons)
- 2-3 tbsp olive oil
- ½ tbsp maple syrup
- 1-2 tbsp fresh mint leaves, minced
- Salt and pepper
Preheat the oven to 350F. Combine the walnuts, maple syrup and sea salt in a small bowl until well mixed. Place on a baking sheet and bake for approximately 10 – 12 minutes until roasted. While the walnuts are roasting, blanch the asparagus in boiling water for 2 – 3 minutes until bright green. Drain the asparagus and rinse or submerge with very cold water to stop the cooking. Set aside.
Mix all the dressing ingredients in a small bowl or jar until well mixed.
Place the romaine, asparagus, strawberries and roasted walnuts in a large salad bowl. Drizzle with the lemon mint vinaigrette dressing and toss gently.
Top the salad with sliced avocado and a sprinkling of fresh mint.

I need to find more recipes to use mint with because we have a ton of it! We also have chocolate mint too. Any ideas???
I rode my bike the other day and it feels like my lungs are actually starting to work. Yay! I actually averaged 17mph, which is still slower but awesome I love being able to ride when it’s not too cold and not too hot. Perfect. Can’t it just stay like this for longer? It’s already starting to creep up into the 90s. Guess I would have to move to Hawaii…
