colavita training camp

Here we are at yet another Monday.  How was your weekend?  My weekend was full of cycling with the Colavita girls.  Man these gals are fast!  I can definitely say that this past weekend I had one of the most challenging training rides trying to keep up with some of the Cat 1/2s.  It’s one of those times that you know you are sure to blow up but keep pushing yourself to keep up, go farther, get better and finally get dropped because you couldn’t hang.  These rides are the best.  While in the moment of suffering, I’m wondering what am I thinking?, but afterwards realize the beauty of such training.  Getting dropped is one of those moments of shame when you realize how much faster everyone else is and how much training you still have to do.  You also realize that this is the point of these kinds of rides because pretty soon you hang on a little bit longer each time until you don’t get dropped.  At least that’s the idea :)  

Some of the girls from the other side of town stayed over night on our side of town.  There was gorgeous views of Lake Mead from the campground.    

I didn’t get quite as many miles as I was hoping because Saturday’s ride totally trashed my legs.

After about 35 miles of pushing past my threshold, my legs were done.  I didn’t make it quite the full 74 miles, but got in 65 averaging 18mph and am definitely ok with that yesireee bob.

What a great group!  Thank goodness for some of the guys for the help with drafting and pushing :)

After the ride we had a nice BBQ spread of yummy food that I gobbled up.

I had some chili, 3 corn muffins, salad, smoothie and a date.  This girl was hungry!

The next day of our training camp was pretty laid back which I was thankful for.  We had a nice ride to the new bridge and Hoover Dam.

We liked stopping for lots of pictures :)

After getting home and doing the wash and a few house chores, I went on a casserole making marathon.  In keeping with my 2012 resolutions and Eat In Month(<-check it out!), I decided to bust it out and get some meals prepped for the week.

Enchilada Casserole and Creamy Chicken Broccoli and Rice Casserole… mmmm We should eat well all week!

Tonight I took a recovery day and it was great to come home with a meal ready to go.  I scooped out some of the broccoli casserole, heated it up in the micro and then broiled it a bit to get golden.  Paired with a simple salad, we had dinner.  Chris and I loved this. I’m not sure what’s not to love about rice, chicken, broccoli and cheese all bundled up in one delicious package.  Dreamy.

This has been my favorite after dinner ‘snack’ lately…A little bit of TJ’s lite kettle corn, a handful of pb puffins and a square of heavenly mint dark chocolate.  crunch crunch crunch  We are also on a Mad Men kick.  I’m going to be terribly sad when we hit the end of the season on Netflix.

Man this stuff is good and packed with strong peppermint flavor which I love.

Sounds like a fun weekend! I like that idea for a nighttime snack that you shared. Will have to try it out while I watch Revenge (aka my TV addiction) on Wednesday evenings!

I have had a craving for chicken, rice and cheese casserole! So satisfying!
I certainly have not been biking for days (wow!) but my husband and I have been taking these classes (probably like a bootcamp) that do really kick our booty! It is exhausting and feels so good, all at the same time!

Wow…you had a super weekend!!! The pay off is ALWAYS the food, isn’t it!! Look at those casseroles! I love enchilada casserole so ooey gooey yummy, a true comfort food and hello, chocolate?? Side of Peanut Butter and I am good to go!
Challenge…huummm. I try to challenge myself on a regular basis, not going light on any work, train like an athlete! ;) I did do a week of Cross Fit recently and that was butt kickin!!

Congrats on the successful bike ride! I went on a bike ride yesterday…to get my hair cut :) It took me 45 minutes, actually, and it was TOUGH! On the way back it was raining the entire time and I was a serious mess. It reminded me of how much I really do love riding the bike.
I love broccoli casserole, and for some reason I’ve never made it. Nick and I are obsessed with broccoli, so I need to put this on my “To make” list!
