plum good

I have to say I was disappointed with the lack of strawberries and cherries this year at TJ’s.  I remember last year we had weeks and weeks of luscious, sweet strawberries in season piled high as you walked in the sliding doors, but this year has not been so good.  This past week I did see a nice carton of plums labeled with ‘sweet and juicy’, so I thought I would give them a try and incorporate them into a savory dish . . .

Usually plums are not my fruit of choice.  Not because I don’t like them per se, but I always seem to go for strawberries, cantaloupe, watermelon and such before I would grab a plum for some reason.  Boy their skins do make my mouth pucker!  This recipe is great because it is quick and easy!

Roasted Pork Loin with Grilled Plums and Balsamic Reduction

Serves:  4

Ingredients

  • 1 pork loin (1.5-2lb) – I used TJ’s black pepper and garlic version
  • 6 small plums, cut in half and cored
  • 1 – 1.5 cups balsamic vinegar
  • 2 tbsp honey
  • 2 heads romaine, chopped
  • sprinkling of roasted walnuts and goat cheese

Pre heat oven to 350 F.  Saute pork loin in a large pan over med-high heat until browned on each side; cover and place in the oven until it reaches 145 F (pork no longer has to be cooked to a dry 160 F).

I got this one when I couldn’t find any plain ones at TJ’s, but it actually turned out pretty good and has about 250 mg of sodium per 4-oz serving.  Not terrible, but not low sodium.

While the pork is roasting, pour the balsamic vinegar and honey into a sauce pan and reduce over med-low heat until syrupy.

Roast the plums on a grill pan until the sugars start to caramelize, about 5-10 minutes.

Place the romaine on a plate with the walnuts and goat cheese, pile on the roasted plums and sliced pork, then drizzle with the balsamic reduction mixture.  Yum!

It turned out nice and juicy.

I always like to pile 1/2 my plate with non-starchy veggies first 🙂

And then I made another salad for lunch the next day.

How is your week going so far?

Mine is going pretty good…keeping busy and got in a spin class Tuesday and a ride in this morning.  There was actually a chill in the air!  It’s been really hot here so it was nice to have 70 degrees this morning at 5.  Chris and I also have a ballroom class this evening 🙂 Hopefully by the wedding date we’ll be ballroom pros . . . ha!
