salmon patties

Happy Friday!  This week has surely flown by and I’m looking forward to the longer weekend ahead 🙂  I have a yummy recipe utilizing canned salmon from Pure Alaska Salmon (I received a sample to review).  Most of the time I’m not able to buy fresh fish, besides for a special treat, so I usually always have canned around.  It is recommended to get at least 2 servings of fish each week and the canned variety can be a great way to get all the health benefits of fish without the heftier price tag.  

Today was a great day because it was also a day off from work 🙂  I was able to get in a  27 mile bike ride this morning and it felt great. I’ve been trying to be consistent with cycling, but doing my best with everything else going on.  We have to do what we can, right?!

Since my little crash a few weeks ago I also got some new racy red handle bar tape.  I’m not usually a big fan of red, but I like how it brings out the red accents on my bike.

Since I passed my thesis proposal, I’ve also been able to start the pre assessments and work site exercise program!  This past week was the first week of the program and my participants did awesome.  Five more weeks to go before I can start post assessments, data analysis and more writing.  When this whole thesis thing is over I don’t know whether I am going to jump up and down from excitement or break down into happy tears of joy.  Probably both.

Wedding planning is also going well and the date is fast approaching, yikes!  Chris and I are going to Reno the following week to meet with the coordinator and finalize planning and vendors.  Should be fun!

Anyhoo, here’s a great, quick recipe to get in those fish servings 🙂

Salmon Patties

Yield:  8-10 patties

Ingredients

  • 3 small cans of Pure Alaska Salmon (or your fav variety)
  • 1/2 red bell pepper, diced
  • 1/3-1/2 cup ww bread crumbs
  • 1/3 cup parmesan cheese
  • 1 egg
  • 1 large lemon, zested and juiced
  • sprinkling of AP seasoning like Mrs. Dash or you could also add herbs like dill

I used 2 cans of sockeye and 1 can of pink salmon, all of which are wild 🙂

 

Then just mix up all the ingredients in one large bowl.  Don’t be scared of the bones, they crumble right up and are a good source of calcium!

The lemon juicer has to be one of my favorite single use kitchen gadgets.

Form into patties and saute in a pan with a little evoo.  They are fairly delicate so be careful when turning.

I like to serve mine along side a refreshing salad or in a sammich.  Yum!

Or sometimes I even munch on one for breakfast.

Hope you all have a great Memorial Day Weekend!  I have to work tomorrow for a bit, but plan on getting in a good ride and more thesis work.  We also are going to a wedding on Sunday that we are looking forward to.  Love weddings!

  1. Such a gorgeous bike! Dig the read tape, but I still think that steerer needs to have the excess cut off! 😉

    I wish I would get the recommended amount of fish each week. Have it generally about once a week 🙁 Wish I had a good excuse, but I’m lazy. Favorite fish? Hmmm, all of them. I haven’t eaten one I didn’t like yet.

  2. @Sean, haha yea, I’m afraid to cut it off until I get an expert bike fit just in case. But you’re right probably should cut it off lol

  3. Sounds like you’ve been super busy, but things are going well. Red is one of my fave colors, so I’m a big fan of that handlebar tape. 🙂

    I don’t eat fish much at all. I’m not a huge fan of it, but when I do eat it, I love salmon.

  5. Congrats on passing your thesis proposal. That’s one big weight off your shoulder! Next is the big wedding plans? I think it’ll be fun, as long as you keep your positive attitude (that’s my own plan, at least).

    Thanks for the great salmon patty recipe. I just bought some canned wild salmon and I think these sound perfect.

  6. These salmon cakes look great! Can’t wait to try them out. I like your lemon juicer too! I could use one of those.

    I also like your bike with the red handle bars! I was just talking to my brother the other day about what type of bike to get and he suggested I get a Jamis.

I really like my Jamis because it really is a great value, the only thing is that the way the frame is positioned I have to have my seat post really high because of my long femurs. I was also looking at cannondale. When are you getting a new bike?! fun! Sorry about the code with the comments 🙁 I was getting so much spam, but I’ll have to look into another plug-in that would work better.

  8. I can’t get used to fish in a can! I used to love tuna, but then got a mental block and that was that. These look great, though—and when my body gets over this tedious “fish allergy”, I would absolutely give this a shot with crumbled up salmon filets. I like *everything* in patty format. My best friend is even named “Patti”. 🙂
