frugal eats + a confession

Alright, alright, I confess!  So I had a slip-up with the Eat In Month Challenge last weekend and it wasn’t a mistake 😉  With Chris being away for work, I needed some socializing and I couldn’t help NOT going out with girlfriends!!  I hadn’t hung out like that in awhile and it was fun!  A nice dinner and then a round of cosmic bowling left us so tired there was no room left for dancing, just yawning.  I think I’m getting old when 9:30 rolls around and I’m pooped!  But I do sport those bowling shoes well . . . hehe

Aside from that, let’s see what else have I been up to . . .

I spent a whopping $36 for groceries this week and still have leftovers that would have been surely gobbled up by Chris.  Don’t let me fool you though, I am soooo excited to pick him up tonight, but the lower grocery bill was kind of nice 😉

I’ve been very frugal in the kitchen, nothing too fancy over here.

TJ’s roasted red pepper soup with added frozen veggies, chickpeas, and pasta.

Can’t forget those kale chips!  I think I practically ate the whole head of kale.

Tacos with mexi cheese, black beans, mushrooms, and salad.

Oh yes, there were also some egg dishes in there as well, LOVE eggs!  Cheap and versatile that’s for sure.  Like an egg and black bean wrap with avocado and greek/salsa for dipping.

Also got to try the Perfects Foods Bars which are tasty, especially if you’re a peanut butter fanatic like me.

They are very peanut buttery and delicious.  Even though they can be left out of the fridge for a day or so, they aren’t too sturdy when room temp and are delicate.

My favorite had to be the carob chip.  Creamy peanut butter, studded with little chunks of chocolate-y goodness.


While they are a bar, most of them are about 300 kcals each, which is more of a lighter meal.  Many of them are packed with upwards of 18g of protein!  This was a great snack for me though 😉  Yum!

Aside from food, I’ve been working, trying to formulate all my thoughts for my thesis, and cycling!

I had an unfortunate mishap with my bike, which left me with a flat and a bent derailleur hanger 🙁  but JT’s Bicycle had the part ordered and my bike ready in no time!  Many thanks to my friends for helping me out.  No worries I didn’t crash or anything!

Also got a new stem that is 10mm longer than my last one which makes such a difference!!!  I love having a little farther reach which distributes my upper body weight more evenly.

I managed to get in 3 good training rides this week.  One was a spin class which doesn’t really count, but the others included an early morning loop (15 mi) and a ride to and from work today (32 mi).  I love riding to work, especially when the high was 61 !!!  yessss

Not sure why but Thursday morning I set my alarm at 4:30, sure that I was going to hit the snooze, but for some reason I was bright eyed and bushy tailed.  I decided to roll with it!  It was freezing and pitch black the entire ride, but I got out there.  Most of my ride looked like this . . .

Thank goodness for Nite Rider lights!  But the sun juuuuust started to poke it’s head out when I was headed home.

Buster has also been keeping me company, well most of the time he is sleeping like this:

Well, there you have it!  Hopefully this post wasn’t too rambly and all over the place.

Thanks for all your well wishes with our wedding plans!  The venue and coordinator are dialed in and I’m trying to get the first round of invites sent out along with trying on dresses with my bridesmaids, yay!

  5. Yep, whenever Nick isn’t here (not usually for work, but vacation…) I spend significantly less time in the kitchen, and on groceries! It’s nice 🙂

    Your tacos looks great, as do the kale chips. I have recently gotten a couple co-workers hooked on kale chips because I made them in our demo kitchen and gave them out. Some people hated them, others loved them!! They sitll talk about them today, it’s great.

    Favorite way to use PB? In my oats and in my granola!
    I tweeted! I’d LOVE to try these. They have kale in them?!?! Crazy.

  6. My fave way to enjoy PB is with banana and chocolate, either by itself or in an ice cream combo like that.

    I agree 300 cals is a small meal, but with all the biking you do, definitely can be a snack. Glad you got some time out with the girl’s while Chris was away, and very glad he is getting back now.

  7. Sounds like you’ve been super busy! I don’t blame you for going out with your girlfriends…sometimes you just need quality hang out time! 🙂

    Glad you got your bike fixed too..sounds like the repairs were really helpful. It would be scary to me to ride when it’s dark like that; thank goodness for lights!

    My fave way to enjoy peanut butter is in oatmeal. 🙂

  9. I’m a big fan of adding beans & veg to those boxed soups–such an easy and quick meal!
    As for peanut butter, my favorite way to enjoy it is probably with pretzels–YUM!

  10. You got up at 4.30…?!? I find you *so* inspirational that way. 🙂 The post wasn’t rambly, it was fun. And I love reading about your biking—if I could buy just one piece of non-snow related fitness equipment, it would be a road bike. I’ve fantasised about road biking for about 4 years—at first, as a stand alone sport, now because I want to do a tri. Someday!

    As for how to eat PB… I like to make home-made PB cups, so I can use a LOT less sugar and a much darker chocolate, all without any kind of creepy additives. Just dark chocolate, PB, graham crumbs, and a sprinkle of icing sugar and salt FTW!!

  11. Peanut Butter is my all time fave! When I was little, my dad would mix peanut butter and syrup together and dip crackers in it. Now, I add a small scoop of peanut butter to my oatmeal from time to time. It takes me back to my dad’s peanut butter creation, with less sugar/fat/calories 🙂

  14. My 2 favorite ways, somewhat similar, one to begin the day, the other to end!

    breakfast:
    1/2 cup oats
    sprinkle of salt
    1 cup water
    microwave 90 seconds
    take out, stir in 1 T PB and 1 T honey
    top with banana slices

    dessert:
    take out a bowl
    throw in a handful of dry oats
    top with a spoonful of PB
    and a handful of chocolate chips
    microwave for like 20-30 seconds
    stir
    top with frozen yogurt
    top THAT with banana slices!
    delicious!

Aww, Buster, you’re sooo cute!! 😀 I cracked up over the pics of you and Kristen in the bowling shoes – those shoes are hot 😉 Spending time with friends is really important, so I think it was great that you got a chance to get out with the girls! Your description of the grocery bill with Chris around had me laugh because Peter is the same way! I’m like “oh, let’s just get this and this” and he’s like “let’s get TEN!” Aiyah 😛

  22. That was a pretty busy week while Chris was away. We slipped up on our Eat-in-Month challenge too, well not really a slip. Saturday we got the carpets cleaned, but the guy was late, and he took forever to clean the carpets, did a good job, but took a long time. So by the time he was done, we all wanted out of the house, so we went shopping and then out to dinner. Glad you got your bike back, and Chris back too. 🙂 And peanut butter is good in just about anything; m&m’s, energy bars, protein shakes, pb&j, but the best way is still just grabbing a a spoon and eating it right out of the jar. 🙂

    Buster is such a good dog, he was so good with Mo and Mason letting them climb all over him. Glad he kept you company, or in a dog’s world, glad you were able to keep him company.

  25. Getting old isn’t so bad. I had dinner with the girls last weekend too, and similar story.. I was home before 1o. 🙂 But Saturday morning was oh-so-sweet.

    Fave way to enjoy peanut butter: in a whole wheat tortilla sometimes with honey or banana slices.
