summer grilling favorite

Hello Friends!  Yes, it is finally mid-week!  This one has been going a bit sloooow for me.  Anyone else?

Well I finally managed to get my butt up at 4am for an early morning ride, yes!  I have been on several rides here and there, but nothing very consistent and boy oh boy I can tell.  Definitely wasn’t my best showing this morning, but it feels good to get out there at least.  With this hot weather, I’ve been a little bleh lately.  Even at 4:30 in the morning it’s very warm.  No fun.  I cannot wait until I can ride to and from work again.  I miss that bunches.  

I managed to Chris and myself out of bed at 4am and I tried to wake up while we got going.  It makes it a lot easier to just have everything ready to go the night before.  I really didn’t want to get up, but we had to hurry before that sun comes up because once that sun comes out there’s nothing but hot, hot, hotness . . .

Chris snapped a lovely shot of me after a good hill, don’t I look like I’m still half asleep? lol

Well, it was a nice 15 mile ride and I felt ready to start the day!  I’m going to make the commitment to do this at least 2-3 times per week to get it back again for myself.  Must stick to it!

I’ve had the desire recently to start up again with pilates on the reformer.  I did reformer pilates while I was dancing and it is absolutely amazing.  I know I have a ton of other things on my ‘plate’ right now, but I would love to try it again and get certified as well!

I also wanted to share with you one of our favorite summer time grilling recipes.  Chris went and grabbed some more propane the other day and we fired up the grill for some dinner.  Jamaican jerk chicken with sweet potatoes and mango salsa is a refreshing and spicy addition to a summer evening.  Sometimes, when the sun goes down, we even get a little break in the hot heat and are able to enjoy this on our little back patio.

This time around I added blueberries and corn to the mango-avocado salsa for the heck of it since I didn’t have any bell peppers for contrasting colors and I kind of liked it!  This salsa is the bomb.

After grilling up the chicken and warming up the sweet potatoes (I roasted them the day before), it was time to eat!

And yes, it was too hot outside to eat on our little patio, but it was still delicious none the less!

A perfect and satisfying summer time meal.

  5. 4am!?! I’m impressed. I always try to wake up early (but not that early, mind you) to run and end up hitting the snooze button incessantly. Thanks for the grilling recipe as well…this looks like a great one!
