simple sunday supper

After the culmination of the weekend was coming to a close, Chris and I decided to do something not so conventional for us on a Sunday evening . . . we cracked open a bottle of wine and rented a movie!!  Usually we spend Sunday night getting things situated for the week and try to get to bed somewhat early so we’re not walking zombies on Monday.  Because our weekend was pretty packed with bike rides, swim lessons, visiting with in-laws and friends, homework, and business brainstorming, I felt like taking it easy.  

Kristen got me a personalized bottle of wine for my birthday and for some reason I was feeling like a glass with dinner.

It was really nice and refreshing!  It was slightly sweet, medium-bodied, and bright with fruit.  This is a wine that’s perfect for summer sippin’ or even could go along nicely with a light dessert.

We started out with a glass, along with some brie and aged gouda with crackers + some nice conversation 🙂  We don’t have any Cakebread wines, but we did get to go on a tour there on our Napa trip 4 years ago.  They are overpriced and snooty in my opinion, but we still got a nice glass to take home!

Chris whipped something up for dinner while I went to grab a movie at the RedBox.  All I knew is that I felt like pasta.  To me there is nothing like a nice glass of wine and a big bowl of pasta.  Just nothing like it.  I was pleasantly surprised with what he came up with, especially since we don’t have too much stuff in the fridge.

I will try to relay his tasty creation to the best of my ability. . . First, he started by making a roux with a small amount of butter and flour in a pan, along with the addition of some chopped prosciutto.  To the roux, he added about 3 chopped heirloom tomatoes and a ricotta-basil mixture that was thinned it out with FF organic milk.  After adding the cooked curly-cue pasta, he mixed in some chopped spinach and various spices like garlic powder, herbes de provence and fresh cracked black pepper.

It was wonderful!  We also had a simple salad on the side.  Yummers.

After enjoying dinner, we hit the couch with a small bowl of TJ’s lite kettle corn to watch Shutter Island. I also tried the last of my Attune Foods probiotic chocolate bars and shared the other half with Chris.  This time I tried the Coffee Bean flavor and boy oh boy it’s good!  I don’t normally like coffee, but when those bold beans are enveloped in a rich dark chocolate that melts in your mouth like a mocha frappuccino with mounds of whip cream, I’ll take it any day! Especially when it’s only 90 kcals/bar.  I have my eye on the mint chocolate flavor 🙂

The movie was creeeeeepy!  I was definitely on the edge of my seat, holding onto Chris at some points lol There is an interesting twist at the end too.  Has Anyone else seen it?

This simple evening was sure a great ending to the weekend. . . .

We are still trying to make it through the leftovers from the weekend and random items in our fridge.  Tonight I had a strange craving for good ol’ oatmeal. mmm Sometimes I sure miss that warm, comforting bowl that is a staple during the winter. During the sweltering summer I mostly make chilled overnight muesli, but for some reason I was craving the hot stuff.

I also finally found some plain pumpkin at my local Whole Foods finally (haaaaa-llelujah!) and decided to make some pumpkin date oats.

Here’s what went into the mix:

  • 1/2 cup NF Organic Milk + 1/2 cup H2O
  • 1/2 cup quick oats
  • 1/2 naner (1/4 mashed in and 1/4 sliced on top)
  • 3 dates from China Ranch (1 mixed in, 2 chopped on top)
  • 1/2 cup canned pumpkin
  • 1 tbsp chia seeds
  • pumpkin pie spice and lots of cinnamon
  • handful of Puffins pb & Cascadian Farm Cinnamon Crunch Cereal
  • dollop of NF Greek Yogurt
  • 2 tsp of TJ’s smooth peanut butter

Whew!  There was a lot in there, but it hit the spot and was uber filling!

  2. Sounds like a very relaxing Sunday evening. Nick and I usually have a beer and watch tv on Sundays, now that he doesn’t work, it’s nice. We also do a lot of garden work and typically go for a long walk.
    This weekend was pretty conventional for us. My parents came over with some friends of theirs and they were all pretty drunk. I guess THAT was unconventional. I don’t see my parents drunk very often but now that we live closer I guess I will! haha, neither of them drink a whole lot but summer weekends tend to get them out more!

  3. I love the personalized wine bottle! I did that for my parents’ anniversary once and put a little black and white photo of them on it. I have wanted to see Shutter Island for so long! It definitely looks creepy though. And your pumpkin date oats look wonderful, I may have to try making something like that!! I love pumpkin any time of the year 🙂

  5. I love the wine Kristen got you – too cute! That sounds like a great way to spend a Sunday evening. We, too, always spend it catching up and trying to get prepped for the week.

    This weekend we bought a new house…that was exciting 🙂

  10. It’s always nice to plan ahead and prep for the week but sometimes you just need to listen to your body and do what it needs… like you did! Rock on girl, I love easy relaxing nights like that. They don’t happen as often as I’d like. I can’t wait to heard more about your new business.
